2 tablespoons granulated sugar or honey
1 tablespoon fresh lemon juice
1 teaspoon lemon zest
1 teaspoon cornstarch
1 tablespoon water
½ teaspoon vanilla extract
For the Creamy Cheesecake Layer
8 oz (225 g) cream cheese, softened
½ cup powdered sugar
1 teaspoon vanilla extract
1 tablespoon fresh lemon juice
½ cup plain Greek yogurt
½ cup heavy whipping cream, cold
For the Crumble
1 cup old-fashioned rolled oats
½ cup all-purpose flour
¼ cup brown sugar
¼ teaspoon cinnamon
Pinch of salt
4 tablespoons melted butter
½ teaspoon vanilla extract
🫐 For Assembly
1 cup fresh blueberries
Extra blueberry compote
Extra crumble
Fresh mint, optional
Powdered sugar, optional
Instructions
1. Make the Blueberry Compote
Add the blueberries, sugar, lemon juice, and lemon zest to a small saucepan.
Cook over medium heat for 5–7 minutes, stirring occasionally.
As the blueberries soften, gently mash some of them with the back of a spoon while leaving some berries whole.
In a small bowl, mix the cornstarch with 1 tablespoon water until smooth.
Pour the slurry into the blueberries and stir continuously.
Cook for another 1–2 minutes, until the mixture thickens.
Remove from the heat and stir in the vanilla.
Allow the compote to cool completely.
Tip: The compote will become thicker as it cools.
2. Make the Oat Crumble
Preheat the oven to 350°F (175°C).
In a bowl, combine:
Rolled oats
Flour
Brown sugar
Cinnamon
Salt
Add the melted butter and vanilla.
Mix until the ingredients form a crumbly mixture.
Spread evenly on a parchment-lined baking sheet.
Bake for 10–14 minutes, stirring once halfway through, until lightly golden.
Allow to cool completely.
The crumble will become crispier as it cools.
3. Make the Cheesecake Filling
Place the softened cream cheese in a large bowl.
Beat until smooth and creamy.
Add:
Powdered sugar
Vanilla
Lemon juice
Greek yogurt
Beat until completely smooth.
In a separate bowl, whip the cold heavy cream until medium-stiff peaks form.
Gently fold the whipped cream into the cream cheese mixture.
Don’t overmix—the goal is a light, fluffy cheesecake filling.
🫐 4. Assemble the Parfaits
Use 4–6 small glasses or dessert cups.
Layer in this order:
Layer 1
Add a spoonful of oat crumble to the bottom.
Layer 2
Add a few fresh blueberries.

Tips for the Best Blueberry Cheesecake Parfaits
🫐 Let the compote cool
Don’t add hot blueberry compote to the cheesecake layer. It can melt the filling and make the parfait runny.
Soften the cream cheese
Room-temperature cream cheese creates a much smoother filling with fewer lumps.
☁️ Don’t overwhip the cream
Whip just until firm enough to hold its shape. Overwhipping can make the texture grainy.
Cool the crumble completely
Warm crumble can soften the cheesecake filling. Let it cool before assembling.
Don’t skip the lemon
Lemon juice and zest balance the sweetness and give the dessert that classic cheesecake flavor.
Easy Variations
Strawberry Cheesecake Parfait
Replace the blueberries with strawberries and make the same compote.
🫐 Mixed Berry Cheesecake
Use a combination of blueberries, raspberries, blackberries, and strawberries.
Lemon Blueberry Parfait
Add extra lemon zest to the cheesecake layer and crumble.
Coconut Blueberry
Add shredded coconut to the crumble.
Chocolate Blueberry
Add a layer of chocolate cookie crumbs or chocolate shavings.
Higher-Protein Version
Use additional Greek yogurt and reduced-fat cream cheese. You can also add a scoop of unflavored or vanilla protein powder to the cheesecake filling, adding a little extra yogurt or milk if necessary to maintain a smooth consistency.
Recipe Q&A
Q: Can I use frozen blueberries?
Yes. Frozen blueberries work very well for the compote. You can use fresh blueberries for the topping.
Q: Do I need to thaw frozen blueberries first?
No. They can go directly into the saucepan. They may require an extra minute or two of cooking.
Q: Can I use blueberry pie filling?
Yes, if you’re short on time, but homemade blueberry compote gives a fresher flavor and allows you to control the sugar.
Q: Can I make these ahead of time?
Absolutely. Assemble them several hours ahead and keep refrigerated.
Q: How long do they last in the refrigerator?
They are best enjoyed within 2–3 days. Keep them covered and refrigerated.
Q: Can I freeze the parfaits?
The cheesecake filling can be frozen, but the fresh blueberries and crumble may lose some texture. For the best result, freeze the cheesecake component separately and assemble fresh.
Q: Can I make this gluten-free?
Yes. Use certified gluten-free oats and a gluten-free flour blend for the crumble.
Q: Can I make it without cream cheese?
Yes. For a lighter yogurt parfait, replace the cream cheese with additional thick Greek yogurt, although the result will taste less like cheesecake.
Q: Can I reduce the sugar?
Yes. Reduce the sugar in the compote and cheesecake filling to your preferred sweetness. The blueberries provide natural sweetness.
Q: Can I use honey instead of sugar?
Yes. Honey works particularly well in the blueberry compote.
Q: Can I use whipped topping instead of heavy cream?
Yes. Fold prepared whipped topping into the cream cheese mixture for a quicker version.
Q: Why is my cheesecake layer runny?
The cream cheese may have been too warm, the whipped cream may not have been whipped enough, or the parfait may need more chilling time.
Q: Can I make individual jars for meal prep?
Yes! Small lidded jars work perfectly. Keep refrigerated and add the final crunchy topping shortly before serving.
