Instructions
1. Prepare the Sweet Potatoes
Preheat your oven to 425°F (220°C).
Wash and scrub the sweet potatoes thoroughly and pat them dry.
Pierce each potato several times with a fork.
Place them on a parchment-lined baking sheet.
2. Season and Roast
Brush the potatoes with olive oil.
Sprinkle with salt, smoked paprika, garlic powder, black pepper, and chili powder.
Roast for 40–55 minutes, depending on their size.
They are ready when a fork slides easily into the center.
3. Prepare the Filling
While the potatoes roast, heat 1 teaspoon olive oil in a skillet over medium heat.
Add the diced onion and bell pepper.
Cook for 3–4 minutes, until slightly softened.
Add the black beans and corn.
Season with cumin, smoked paprika, chili powder, garlic powder, salt, and pepper.
Cook for another 4–5 minutes, stirring occasionally.
Remove from heat and stir in the lime juice.
4. Make the Boats
Allow the sweet potatoes to cool for about 5 minutes so they are easier to handle.
Cut a deep slit lengthwise down the center of each potato, but don’t cut completely through the bottom.
Gently press the ends inward to open the potato.
Use a fork to fluff the inside.
5. Add the Filling
Spoon the black bean and corn mixture generously into each sweet potato.
Top with shredded cheese.
6. Melt the Cheese
Return the loaded potatoes to the oven.
Bake for another 5–8 minutes, until the cheese is melted and bubbly.
For a slightly browned top, broil for 1–2 minutes, watching carefully.
7. Add Fresh Toppings
Remove from the oven and top with:
Diced avocado
Cherry tomatoes
Green onions
Fresh cilantro
Jalapeño
Sour cream or Greek yogurt
Finish with fresh lime juice.
Serve immediately.

Tips for Perfect Sweet Potato Boats
Choose similar-sized potatoes
Using potatoes of similar size helps them finish cooking at the same time.
Don’t wrap them in foil
Roasting them uncovered helps the skins become slightly crisp while the centers turn soft and fluffy.
Make them extra crispy
After filling the potatoes, place them under the broiler for 1–2 minutes.
Don’t overload with wet toppings
Add avocado, tomatoes, sour cream, and other fresh toppings after baking to keep the potato from becoming soggy.
Make them vegan
Simply omit the cheese and sour cream or replace them with vegan alternatives.
Add more protein
For a higher-protein version, add:
Seasoned grilled chicken
Ground turkey
Shredded chicken
Tofu
Extra black beans
Lentils
Greek yogurt
Air Fryer Method
You can make the sweet potatoes in an air fryer:
Wash and dry the potatoes.
Pierce them several times with a fork.
Rub with olive oil and salt.
Air fry at 390°F (200°C) for about 35–45 minutes, turning halfway.
Check with a fork for tenderness.
Cut open and fluff the centers.
Add the prepared filling and cheese.
Air fry at 375°F (190°C) for another 3–5 minutes until the cheese melts.
Add fresh toppings and serve.
