Blue Raspberry Coconut Protein Whip
Yield: about 4 servings
Style: high-protein, fluffy, low-sugar dessert
Texture: somewhere between whipped mousse, yogurt whip, and soft pudding
Ingredients
Blue raspberry protein whip
1 package (0.3 oz / about 8.5 g) sugar-free Berry Blue Jell-O
1 cup boiling water
1 scoop vanilla protein powder — approximately 25–30 g
1 cup plain or vanilla Greek yogurt
½ cup unsweetened coconut milk
Use refrigerated carton coconut milk, not canned coconut cream.
½ cup mashed blueberries — fresh or thawed frozen
½ teaspoon vanilla extract, optional
Sweetener to taste, if your protein powder/yogurt isn’t sweet enough
Toppings
Fresh blueberries
Unsweetened shredded coconut
Sugar-free whipped topping
Optional: a few extra mashed blueberries swirled through the top
The photo’s ingredient card specifically shows sugar-free Berry Blue Jell-O, protein powder, Greek yogurt, coconut milk, mashed blueberries, shredded coconut and sugar-free whipped topping. The exact quantities of some of the smaller lines aren’t completely legible, so the measurements above are a practical reconstruction rather than claiming every number was readable from the photograph.
Instructions
1. Dissolve the Jell-O.
Put the sugar-free Berry Blue Jell-O powder in a large mixing bowl. Pour in 1 cup boiling water.
Whisk for 1–2 minutes, until the crystals are completely dissolved.
2. Cool it slightly.
Let the mixture stand for about 5–10 minutes. You don’t want it piping hot when adding the yogurt and protein powder.
3. Add the protein.
Whisk in the vanilla protein powder gradually. Whisk thoroughly so there aren’t protein-powder lumps.
4. Add yogurt and coconut milk.
Add the Greek yogurt and unsweetened coconut milk. Beat or whisk until smooth and creamy.
5. Add blueberries.
Fold in the mashed blueberries. For a completely blue, smooth whip, blend them first. For the appearance in the photograph, leave some tiny blueberry pieces/swirl visible.
6. Chill.
Refrigerate for approximately 1–2 hours, until the mixture has thickened.
7. Whip for the fluffy texture.
Once chilled, beat the mixture with a hand mixer for approximately 1–3 minutes. This incorporates air and gives you the fluffy texture shown in the cups.
8. Portion.
Spoon into four small dessert cups.
9. Decorate.
Top with:
a small amount of sugar-free whipped topping
fresh blueberries
unsweetened shredded coconut
For the picture-perfect look, pipe or spoon a mound of the whip slightly above the rim and finish with blueberries and coconut.
Nut / Allergy Information
This is an important part because coconut is classified differently depending on the country’s labeling rules.
Contains / may contain
Coconut:
The recipe contains coconut milk and shredded coconut. Coconut is botanically a fruit, but coconut is treated as a tree nut for allergen-labeling purposes in the United States. Someone with a medically diagnosed tree-nut allergy should therefore check with their allergist and verify the labels of coconut products rather than assuming coconut is safe.
Milk/dairy:
Greek yogurt and most whey-based protein powders contain milk. Therefore this recipe is not dairy-free unless you substitute both.
Protein powder:
This is a major cross-contact consideration. Some protein powders are manufactured in facilities processing:
milk
soy
eggs
peanuts
tree nuts
wheat
Always check the particular protein powder’s allergen statement.
Does it contain peanuts?
The recipe itself does not intentionally contain peanuts.
However, packaged protein powder, whipped topping, Jell-O, coconut products, and other ingredients should be checked for peanut cross-contact if the allergy is severe.
Does it contain tree nuts?
It contains coconut. See the coconut warning above. If you’re preparing this for someone with a tree-nut allergy, don’t assume it is safe simply because coconut isn’t technically a tree nut botanically.
Does it contain almonds?
Not inherently. But check the coconut milk and protein powder labels for almond cross-contact.
Gluten-free?
The basic ingredients are generally compatible with a gluten-free diet, but check each package, particularly the protein powder and whipped topping. Don’t rely solely on the ingredient list if someone has celiac disease or a serious wheat/gluten allergy.
Egg-free?
The basic recipe doesn’t require eggs. However, check packaged ingredients for manufacturing/cross-contact information.
Soy-free?
Potentially, but protein powders and whipped toppings can contain soy or soy lecithin. Check the individual labels.
Protein Options
You can use:
Whey protein
Best if you want a creamy, dairy-style dessert and don’t need it to be dairy-free.
Whey isolate
A good choice if you want high protein with relatively little lactose. Some whey isolates are marketed as low-lactose; they’re not automatically lactose-free.
Casein protein
Will generally make the mixture thicker and more pudding-like.
Plant protein
Use a vanilla plant protein if you need a dairy-free version, but the texture can be slightly different. Pea protein, for example, may produce a somewhat denser result.
Tip: Don’t add multiple scoops of protein powder without adjusting the liquid. Too much protein powder can turn this from fluffy to thick and chalky.
🫐 Lower-Sugar Version
Use:
sugar-free Berry Blue Jell-O
unsweetened Greek yogurt
unsweetened coconut milk
unsweetened protein powder
fresh blueberries in moderation
sugar-free whipped topping
The blueberries still contribute naturally occurring carbohydrates and sugar, so “sugar-free Jell-O” does not mean the finished dessert contains zero sugar.
Dairy-Free Version
Replace:
Greek yogurt → unsweetened dairy-free Greek-style yogurt
whey protein → plant-based vanilla protein
dairy whipped topping → dairy-free whipped topping
Check every replacement for coconut, almond, soy, pea, or other allergens according to the person you’re serving.
Q&A
Q: Can I use canned coconut milk?
Yes, but it will be much richer and can make the whip heavier. For the light texture pictured, unsweetened carton coconut milk is easier to work with.
Q: Can I use almond milk instead?
Yes, but then the recipe is no longer coconut-flavored in the same way. If you’re avoiding coconut because of an allergy, make sure the protein powder and other ingredients are also appropriate.
Q: Can I use frozen blueberries?
Yes. Thaw them first and drain excess liquid. Excess water can make the whip less fluffy.
Q: Can I skip the blueberries?
Yes. The Berry Blue Jell-O provides the main blue-raspberry flavor. The blueberries add fruit flavor, texture and visual appeal.
Q: Why is the Jell-O used?
It helps provide the characteristic blue-raspberry flavor and, once chilled, contributes structure so the mixture can become a fluffy, spoonable dessert.
Q: Why did mine turn out runny?
Usually one of these:
too much liquid
yogurt with a high water content
insufficient chilling
Jell-O wasn’t fully dissolved
the mixture was served before it had set
Give it more refrigeration time before adding extra ingredients.
Q: Why is mine too thick?
Whisk in a small amount of coconut milk, 1 tablespoon at a time, until you reach the desired consistency.
Q: Can I make it ahead?
Yes. Keep it covered and refrigerated. For the best fluffy texture, I’d make it the same day or the night before.
Q: Can I freeze it?
You can, but the texture may change considerably after thawing. This recipe is best refrigerated rather than frozen.
Q: Can I make it without protein powder?
Yes, but it won’t be a protein whip anymore and will have less structure/protein. You may need to adjust the yogurt and liquid to get the desired consistency.
Q: How can I make it more intensely blue?
A tiny amount of blue food coloring can intensify the color. The blue color in the photograph is particularly vibrant.
Q: Is it keto?
Not necessarily. Sugar-free Jell-O alone doesn’t make a recipe keto. The yogurt, blueberries, protein powder and whipped topping all contribute carbohydrates. Check the nutrition labels and calculate the total based on the exact products you use.
Q: How much protein is in one serving?
It depends heavily on the protein powder and yogurt. With one 25–30 g serving of protein powder divided among four portions, the dessert will not automatically contain 20–30 g protein per serving. For an accurate number, calculate from the specific labels.
Best Texture Formula
If your priority is getting the same fluffy cup appearance as the photo, I’d use:
1 package sugar-free Berry Blue Jell-O + 1 cup boiling water + 1 scoop vanilla protein powder + 1 cup Greek yogurt + ½ cup unsweetened coconut milk + ½ cup mashed blueberries.
Chill → whip → portion → top with coconut, blueberries and sugar-free whipped cream.
