Crispy Golden Potato Pancakes
Crispy on the outside, tender and fluffy inside, these golden potato pancakes are made with freshly grated potatoes, onion, egg, and a little flour. The key to getting them beautifully crisp is squeezing out as much moisture as possible before frying.
Ingredients
For the Potato Pancakes
4 medium russet or Yukon Gold potatoes, about 1½–2 lb
1 small yellow onion
2 large eggs
4 tbsp all-purpose flour
1 tsp salt
½ tsp black pepper
½ tsp garlic powder
½ tsp paprika
2 tbsp chopped fresh parsley or chives
½ tsp baking powder, optional
¼ cup vegetable or canola oil, approximately, for frying
Optional Garlic Butter Finish
1 tbsp butter
1 small garlic clove, minced
1 tbsp fresh parsley
For Serving
Sour cream or Greek yogurt
Chopped chives or green onions
Fresh parsley
Applesauce, optional
Instructions
1. Prepare the Potatoes
Peel the potatoes and grate them using the large holes of a box grater.
Grate the onion as well.
Place the grated potato and onion in a clean kitchen towel or cheesecloth and squeeze firmly to remove as much liquid as possible. Removing excess moisture is one of the most important steps for crisp potato pancakes.
2. Save the Natural Potato Starch
If there is a lot of liquid, let it sit in the bowl for a few minutes.
Carefully pour off the watery liquid while leaving any white potato starch settled at the bottom.
Add that starch back to the grated potatoes.
This natural starch helps the pancakes bind and become crisp.
3. Make the Batter
Place the squeezed potatoes and onion in a large bowl.
Add:
Eggs
Flour
Salt
Black pepper
Garlic powder
Paprika
Parsley or chives
Baking powder, if using
Mix thoroughly until everything is evenly combined.
The mixture should be moist but not watery.
4. Heat the Pan
Heat a large nonstick or cast-iron skillet over medium to medium-high heat.
Add enough oil to lightly coat the bottom of the pan.
The oil should be hot before adding the potato mixture.
5. Form the Pancakes
Scoop approximately ¼ cup of the potato mixture into the pan.
Flatten gently with the back of a spoon or spatula.
Make the pancakes about 3–4 inches wide and fairly thin. Thin pancakes develop more crispy edges.
Don’t overcrowd the skillet.
6. Fry Until Golden
Cook for approximately 3–5 minutes per side.
The first side should be deeply golden brown and crisp before flipping.
Carefully turn the pancake with a spatula and cook the second side until golden and cooked through.
Adjust the heat if the outside browns too quickly.
7. Drain
Transfer cooked pancakes to a wire rack or paper towel-lined plate.
Sprinkle lightly with salt while they’re still hot.
If making several batches, keep finished pancakes warm in a 200°F (95°C) oven.
8. Optional Garlic Butter Finish
Melt 1 tablespoon butter in a small skillet.
Add minced garlic and cook for about 30 seconds.
Remove from heat and stir in parsley.
Lightly brush the garlic butter over the hot pancakes.
9. Serve
Serve immediately with a spoonful of sour cream or Greek yogurt.
Garnish with fresh chives or parsley.
For a sweet-and-savory combination, serve with applesauce.
Quick Garlic Herb Sour Cream
Mix together:
½ cup sour cream
1 tbsp chopped fresh chives
½ small garlic clove, finely grated
1 tsp lemon juice

Secrets to Extra-Crispy Potato Pancakes
1. Squeeze the potatoes REALLY well
Moisture is the enemy of crispiness. Use a clean kitchen towel and squeeze firmly.
2. Don’t rinse the grated potatoes
Rinsing removes the natural starch that helps the pancakes hold together and crisp.
3. Use high-starch potatoes
Russet potatoes are an excellent choice for crispy pancakes.
4. Don’t overcrowd the pan
Too many pancakes at once can lower the oil temperature and cause them to become greasy instead of crisp.
5. Keep the pancakes relatively thin
A thinner pancake develops more crispy surface area.
6. Wait before flipping
Let the first side become deeply golden and firm before turning.
7. Use a wire rack
A wire rack allows steam to escape and helps prevent the bottoms from becoming soggy.
Oven-Baked Version
For a lighter alternative:
Preheat oven to 425°F (220°C).
Prepare the potato mixture as directed.
Generously brush a baking sheet with oil.
Form ¼-cup portions into thin pancakes.
Brush the tops lightly with oil.
Bake for 15–20 minutes.
Flip carefully.
Bake another 10–15 minutes, until deeply golden and crisp.
They won’t have quite the same fried texture, but this method uses considerably less oil.
Air Fryer Version
Preheat air fryer to 400°F (200°C).
Form the potato mixture into thin pancakes.
Lightly spray or brush both sides with oil.
Place in a single layer.
Air fry for 8–10 minutes.
Flip.
Cook another 5–8 minutes, until golden and crisp.
Cook in batches rather than overcrowding the basket.
Q&A
Why are my potato pancakes soggy?
The potatoes probably retained too much moisture, or the pan wasn’t hot enough. Squeeze the grated potatoes very thoroughly and make sure the oil is hot before adding the batter.
Why do my pancakes fall apart?
Usually there isn’t enough binding or the potatoes are too wet. Squeeze the potatoes again and make sure you have enough egg and flour.
Should I rinse the potatoes?
No. For this style of potato pancake, keeping the natural starch helps with binding and crispiness.
What potatoes are best?
Russet potatoes are particularly good because of their high starch content. Yukon Gold potatoes also work and give a slightly creamier interior.
Can I use leftover mashed potatoes?
Yes. That’s a different style of potato pancake, but it’s an excellent way to use leftovers. Mashed-potato versions generally need egg and a starch such as flour or potato starch to bind.
Can I make these gluten-free?
Yes. Replace the all-purpose flour with a gluten-free all-purpose flour blend or potato starch.
Can I make them without eggs?
Yes. For an egg-free version, use a suitable egg replacer or a small amount of starch slurry. The texture may be slightly different.
Can I add cheese?
Absolutely. Add ½ cup shredded cheddar, mozzarella, or Parmesan to the mixture for cheesy potato pancakes.
Can I add vegetables?
Yes. Finely grated zucchini, carrot, or sweet potato can be added. Make sure to squeeze zucchini extremely well because it contains a lot of water.
Can I add garlic?
Yes. Add 1–2 finely minced garlic cloves or ½–1 teaspoon garlic powder.
Can I make them spicy?
Definitely. Add cayenne, chili flakes, smoked paprika, or a finely chopped jalapeño.
What should I serve with them?
Classic choices include sour cream, Greek yogurt, applesauce, chives, or fresh herbs.
Can I make them ahead of time?
Yes, but they’re best freshly cooked. To re-crisp them, use an oven or air fryer rather than a microwave.
How do I store leftovers?
Cool completely and refrigerate in an airtight container for up to 3–4 days.
How do I reheat them?
Reheat at 400°F (200°C) in the oven or air fryer until hot and crisp, usually around 5–10 minutes.
Can I freeze potato pancakes?
Yes. Cool them completely, place parchment between the pancakes, and freeze in a sealed container or freezer bag.
Reheat directly from frozen in an oven or air fryer.
