 Ingredients
For the Roasted Vegetables
- 1 medium zucchini, chopped
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 small red onion, chopped
- 1 cup cherry tomatoes
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- ½ teaspoon garlic powder
- Salt and black pepper, to taste
For the Orzo Salad
- 1½ cups dry orzo pasta
- ¾ cup crumbled feta cheese
- ¼ cup chopped fresh parsley
- 2 tablespoons chopped fresh basil, optional
- ¼ cup sliced Kalamata olives, optional
For the Lemon Dressing
- ¼ cup extra-virgin olive oil
- 2 tablespoons fresh lemon juice
- 1 teaspoon lemon zest
- 1 small garlic clove, finely minced
- 1 teaspoon honey
- ½ teaspoon dried oregano
- Salt and black pepper, to taste
 Instructions
1. Roast the vegetables
Preheat your oven to 425°F (220°C).
Place the zucchini, bell peppers, red onion, and cherry tomatoes on a large baking sheet. Drizzle with olive oil and season with oregano, garlic powder, salt, and black pepper.
Toss well and spread into an even layer. Roast for 20–25 minutes, stirring once halfway through, until the vegetables are tender and lightly caramelized.
2. Cook the orzo
While the vegetables roast, bring a large pot of salted water to a boil.
Cook the orzo according to the package directions until al dente. Drain well and rinse briefly with cool water to stop the cooking process.
3. Make the dressing
In a small bowl or jar, whisk together:
- Olive oil
- Fresh lemon juice
- Lemon zest
- Garlic
- Honey
- Oregano
- Salt and pepper
Mix until well combined.
4. Assemble the salad
In a large bowl, combine the cooked orzo and roasted vegetables.
Add the parsley, basil, and olives if using. Pour the lemon dressing over the salad and toss gently until everything is evenly coated.
5. Add the feta
Fold in most of the crumbled feta cheese, then sprinkle the remaining feta over the top.
Serve immediately or refrigerate for 30 minutes before serving to allow the flavors to blend.
