Tuscan White Bean & Kale Vegetable Soup

Instructions
1. Sauté the Vegetables

Heat olive oil in a large soup pot or Dutch oven over medium heat.

2. Add Garlic & Seasonings

Add the minced garlic, Italian seasoning, rosemary, thyme, paprika, salt, black pepper, and red pepper flakes.

Cook for 30–60 seconds, until fragrant.

Stir in the tomato paste and cook for another 1 minute.

3. Add Tomatoes & Beans

Add the cherry tomatoes and white beans.

Stir gently to combine.

Cook for 2–3 minutes so the tomatoes begin to soften and the flavors develop.

4. Add the Broth

Pour in the broth and add the bay leaf.

Bring the soup to a gentle boil.

Reduce the heat to low and simmer uncovered for 20–25 minutes, stirring occasionally.

Stir in the chopped kale during the final 5–7 minutes of cooking.

Cook until the kale is tender but still has some texture.

Remove the bay leaf.

For a naturally thicker soup, scoop out about ½ cup of the beans and vegetables, mash them with a fork, and stir them back into the pot.

This thickens the broth without needing flour or cream.

7. Finish With Lemon

Stir in the fresh lemon juice.
