Ingredients

Makes: 16 cookies
Prep: 15 minutes
Bake: 12–15 minutes
Total: About 30 minutes

Dry Ingredients
1 cup old-fashioned rolled oats
½ cup almond flour
½ cup chopped walnuts
¼ cup pumpkin seeds
¼ cup sunflower seeds
2 tbsp chia seeds
2 tbsp ground flaxseed
¼ cup unsweetened shredded coconut
½ tsp cinnamon
¼ tsp salt
Wet Ingredients
2 ripe bananas, mashed
â…“ cup natural almond butter or peanut butter
¼ cup honey or pure maple syrup
1 tsp vanilla extract
2 tbsp melted coconut oil or butter
Optional Add-Ins
¼ cup raisins or chopped dates
2 tbsp dark chocolate chips
2 tbsp dried cranberries
½ tsp ground ginger
1 tbsp sesame seeds
Instructions
1. Preheat the oven

Preheat your oven to 350°F (175°C).

Line a large baking sheet with parchment paper.

2. Combine the dry ingredients

In a large bowl, add:

Rolled oats
Almond flour
Walnuts
Pumpkin seeds
Sunflower seeds
Chia seeds
Flaxseed
Coconut
Cinnamon
Salt

Stir until evenly combined.

3. Prepare the wet mixture

In another bowl, mash the bananas until mostly smooth.

Add almond butter, honey or maple syrup, vanilla, and melted coconut oil.

Whisk until smooth and creamy.

4. Combine

Pour the wet mixture into the dry ingredients.

Stir until everything is thoroughly incorporated.

Fold in raisins, dates, dried cranberries, or chocolate chips if using.

The mixture should be thick and slightly sticky.

5. Rest the mixture

Let the mixture sit for 5–10 minutes.

This allows the oats and chia seeds to absorb some moisture and makes the cookies easier to shape.

6. Shape the cookies

Scoop approximately 2 tablespoons of mixture for each cookie.

Place on the prepared baking sheet.

Flatten gently with your fingers or the back of a spoon because these cookies don’t spread much during baking.

7. Bake

Bake for 12–15 minutes, until the edges are lightly golden and the cookies feel set.

Don’t overbake if you want a softer, chewy texture.

8. Cool

Allow the cookies to cool on the baking sheet for 5 minutes.

Transfer to a wire rack and cool completely.

They will firm up as they cool.

Optional Energy Cookie Variations Chocolate Nut

Tips for Perfect Energy Cookies
Use ripe bananas

The riper the bananas, the sweeter and softer the cookies will be.

Don’t grind all the nuts

A combination of chopped nuts and seeds gives the cookies a better texture.

Make them uniform

Using a cookie scoop helps every cookie bake evenly.

Want crunchier cookies?

Bake for an additional 2–3 minutes, watching carefully.

Want softer cookies?

Remove them as soon as the edges become lightly golden.

No almond flour?

Use finely ground oats instead.

No almond butter?

Peanut butter, cashew butter, or sunflower seed butter can be substituted.

Q&A
Can I make these cookies without nuts?

Yes. Replace the almond flour with oat flour and walnuts with pumpkin or sunflower seeds. Use sunflower seed butter instead of almond or peanut butter.

Can I use peanut butter?

Absolutely. Natural creamy peanut butter works very well.

Can I use dates instead of honey?

Yes. Blend ¼ cup soft dates with a little warm water to create a paste, then mix it with the wet ingredients.

Can I use quick oats?

Yes, but the texture will be softer. Old-fashioned rolled oats provide more texture.

Are these cookies gluten-free?

They can be. Use certified gluten-free oats and verify that all packaged ingredients are gluten-free.

Are these keto cookies?

Not as written. Bananas, oats, honey, and dried fruit make them relatively high in carbohydrates.

Can I reduce the sugar?

Yes. Use only ripe bananas and reduce or omit the honey/maple syrup. The cookies will be less sweet and slightly less moist.

Can I add protein powder?

Yes. Add 2–3 tablespoons of your favorite protein powder. If the mixture becomes too dry, add 1–2 tablespoons milk or water.

Can children eat these?

Yes, provided they don’t have allergies to the nuts or seeds. For young children, finely chop nuts and seeds to reduce choking risk.

How should I store them?

Store in an airtight container at room temperature for about 2–3 days, or refrigerate for up to 1 week.

Can I freeze them?

Yes. Place cooled cookies in a freezer-safe container with parchment between layers and freeze for up to 3 months.

Can I eat them for breakfast?

Yes. Pair one or two with Greek yogurt, cottage cheese, or fruit for a more balanced breakfast.

Why are my cookies falling apart?

The mixture may be too dry or the cookies may not have cooled enough. Make sure the banana and nut butter provide enough moisture, and allow the cookies to cool completely before handling.
