Cottage Cheese Egg Bites

Yield: 12 egg bites
Prep: 10 minutes
Bake: 20–25 minutes
Total: about 35 minutes
Difficulty: Easy

Ingredients
Egg-bite base
6 large eggs
1 cup cottage cheese
½ cup shredded cheese
Cheddar, mozzarella, Monterey Jack, Gruyère, or a combination
¼ teaspoon salt
¼ teaspoon black pepper
¼ teaspoon garlic powder, optional
¼ teaspoon onion powder, optional
Vegetable/herb filling

Use about ½–1 cup total:

¼ cup finely diced red bell pepper
¼ cup chopped spinach
2 tablespoons finely chopped green onion
1–2 tablespoons fresh parsley or cilantro
1 tablespoon finely chopped tomato, optional

Optional: ¼ cup cooked, crumbled bacon, sausage, ham, or turkey.

Important: Cook vegetables with significant moisture, such as mushrooms, spinach, or zucchini, first and squeeze/drain off excess liquid. Otherwise the egg bites can become watery.

Equipment
12-cup standard muffin tin
Blender or food processor
Mixing bowl
Measuring cups/spoons
Cooking spray or a little olive oil
Small spatula or butter knife
Step-by-Step Instructions
1. Preheat the oven

Preheat oven to 325°F (165°C).

For especially creamy egg bites, place a baking dish containing hot water on the lower oven rack. A water bath/steam environment helps produce a softer, custardy texture.

2. Prepare the muffin pan

Generously spray a 12-cup muffin pan with nonstick cooking spray.

A silicone muffin pan is particularly convenient because egg mixtures can stick to metal pans.

3. Prepare the vegetables

Finely chop the bell pepper, spinach, green onion and herbs.

If using spinach, mushrooms, or other watery vegetables:

Sauté until softened.
Allow them to cool slightly.
Press or squeeze out excess moisture.

Set aside.

4. Blend the egg mixture

Add to a blender:

6 eggs
1 cup cottage cheese
½ cup shredded cheese
¼ teaspoon salt
¼ teaspoon black pepper
Garlic powder and onion powder, if using

Blend for approximately 20–40 seconds, just until smooth.

Blending the cottage cheese into the eggs gives the bites their creamy texture. Similar recipes specifically use blending to create a smooth, fluffy/custardy result.

5. Add the fillings

Divide the vegetables and herbs among the 12 muffin cups.

If using bacon, sausage, ham or turkey, divide that among the cups as well.

6. Add the egg mixture

Pour the blended egg mixture evenly into the muffin cups.

Fill each approximately ¾ full. Don’t fill all the way to the rim because the mixture expands slightly as it cooks.

7. Add extra cheese

For a more golden, cheesy top, sprinkle a small amount of additional shredded cheese over each cup.

8. Bake

Bake at 325°F (165°C) for approximately 20–25 minutes.

They’re ready when:

The centers are set.
The tops are lightly golden.
The egg mixture no longer looks wet.
The bites pull slightly away from the sides of the pan.

Cooking times vary with the size/material of the muffin pan. Similar recipes use approximately 20–25 minutes at 325°F.

9. Cool

Remove the pan from the oven and let the egg bites cool for 3–5 minutes.

Run a small knife or spatula around the edges and gently lift them out.

10. Serve

Serve warm with:

Fresh fruit
Avocado
Toast
Salsa
Hot sauce
Fresh herbs
Roasted potatoes

Nutrition Information

Nutrition depends heavily on the cottage cheese, cheese, fillings and quantities you use, so treat these as estimates rather than exact medical/dietary values.

With a relatively simple egg/cottage-cheese/cheese recipe, one egg bite will generally provide roughly:

Calories: ~80–110
Protein: ~7–9 g
Carbohydrates: ~1–3 g
Fat: ~5–8 g
Fiber: ~0–1 g

For comparison, published cottage-cheese egg-bite recipes report around 7–9 g protein per bite, depending on the formulation.

A recipe using 8 eggs, cottage cheese and shredded cheese can provide substantially more protein per serving; one published version reports 24 g protein per serving when a serving consists of multiple egg bites.

Dietary Information

Vegetarian: Yes, if meat is omitted.
Gluten-free: Generally yes, provided all packaged ingredients are certified/verified gluten-free.
Low-carb: Generally yes.
Keto-friendly: Can fit a keto diet depending on the fillings and specific dairy products.
Nut-free: The basic recipe contains no nuts.

Major allergens
Eggs
Milk/dairy

If you’re cooking for someone with a food allergy, check the labels on cottage cheese, shredded cheese, cooking spray and any processed meats for cross-contact/allergen statements.

Storage & Meal Prep
Refrigerator

Cool completely, then store in an airtight container in the refrigerator.

For best quality, use within 3 days. Published recipes vary slightly, with some recommending up to 3–4 days.

Freezer

Egg bites can be frozen for approximately 2 months.

For freezing:

Cool completely.
Wrap individually or place in a freezer-safe container.
Freeze.
Thaw overnight in the refrigerator.
Reheating

Microwave from refrigerator:
Heat approximately 30–45 seconds, checking halfway.

From frozen:
Microwave approximately 1½ minutes, turning halfway through, then continue heating as needed.

Oven:
Heat at 350°F for about 8–10 minutes.

Avoid overheating because eggs can become rubbery.

Recipe Q&A
Can I make these without a blender?

Yes. Whisk the eggs and cottage cheese very thoroughly. The texture may be slightly less silky, but they’ll still work. Several recipes specifically note that a blender is convenient rather than absolutely necessary.

Do I have to use full-fat cottage cheese?

No. Low-fat or 2% cottage cheese works. Full-fat generally gives a richer, creamier texture.

Can I use egg whites?

Yes. Egg whites can be substituted, although the finished egg bites will generally be less rich. Some recipes specifically use egg whites as a lower-fat alternative.

Why are my egg bites watery?

The most common culprit is excess water from vegetables, particularly spinach, mushrooms, zucchini or tomatoes.

Cook watery vegetables first and drain/squeeze them well.

Why did my egg bites collapse?

A little settling after baking is normal. They can puff in the oven and then shrink as they cool.

Overbaking can also make the texture firmer and less creamy.

Why are they rubbery?

Usually they have been overbaked or cooked at too high a temperature.

Take them out as soon as the centers are set.

Can I make them without vegetables?

Absolutely. The basic combination of eggs, cottage cheese and shredded cheese works on its own.

Can I add meat?

Yes. Bacon, cooked sausage, ham or turkey all work well. Cook the meat completely before adding it.

Can I use frozen spinach?

Yes. Thaw it completely and squeeze out as much water as possible before adding it.

Can I use tomatoes?

Yes, but use them sparingly and preferably remove excess seeds/liquid. Too much tomato can make the egg bites wet.

Can I make them dairy-free?

Not with ordinary cottage cheese. You would need a suitable dairy-free cottage-cheese substitute and dairy-free shredded cheese, and the texture may differ.

Can I make them ahead?

Yes. That’s one of the best things about this recipe. They are designed to work well as a make-ahead breakfast and can be refrigerated or frozen.

How do I prevent sticking?

Grease the muffin tin very generously. Silicone molds are another good option.

Can I use a mini muffin pan?

Yes. Reduce the baking time and start checking early because the smaller portions cook faster.

Can I double the recipe?

Yes. For 24 egg bites, simply double the ingredients and use two muffin pans.

My Recommended Version for the Image

For the colorful egg bites shown in your photo, I’d use:

6 eggs + 1 cup cottage cheese + ½ cup cheddar/mozzarella + red bell pepper + spinach + green onion + parsley + salt + pepper.

Bake at 325°F for about 20–25 minutes, preferably with gentle steam/water-bath conditions for a softer center. This combination gives you the golden cheesy top, colorful vegetables, creamy center and high-
