Ingredients

Instructions
1. Prepare the vegetables
Wash and dry all vegetables thoroughly.
Cut the tomatoes into wedges or bite-size chunks.
Slice the cucumber and bell pepper.
Thinly slice the red onion.
For a milder onion flavor, soak the sliced onion in cold water for 5–10 minutes, then drain well.
2. Make the dressing
Add olive oil, lemon juice, red wine vinegar, garlic, oregano, Dijon mustard, salt, and black pepper to a small jar or bowl.
