Blueberry Cheesecake

1 cup sour cream

2 cups fresh or frozen blueberries
⅓ cup granulated sugar
1 tbsp fresh lemon juice
1 tsp lemon zest
1 tbsp cornstarch
2 tbsp water
½ tsp vanilla extract
Instructions
1. Prepare the Oven

Preheat oven to 325°F (165°C).

Grease a 9-inch springform pan and line the bottom with parchment paper.

2. Make the Crust

Combine graham cracker crumbs, melted butter, sugar, and salt.

Mix until the crumbs resemble wet sand.

Press firmly into the bottom of the springform pan.

Bake for 8–10 minutes.

Remove and allow the crust to cool while preparing the filling.

3. Prepare the Cheesecake Filling

In a large bowl, beat the softened cream cheese and sugar on low to medium speed until smooth.
