3-Ingredient Oven-Baked Puff Pastry Pockets

 Instructions
1. Prepare the oven
Preheat the oven to 400°F (200°C).
Line a baking dish or baking sheet with parchment paper.
2. Prepare the pastry
Keep the puff pastry cold while working with it.
Place the thawed pastry on a lightly floured surface and gently roll it just enough to smooth the seams.
Cut each pastry sheet into 6 equal rectangles, giving you 12 rectangles total.
3. Add the filling
Place about 1 tablespoon of jam in the center of 6 pastry rectangles.
Leave about a ½-inch border around the edges.
Don’t overfill—the jam can bubble out during baking.
4. Seal the pockets
Beat the egg in a small bowl.
Brush a thin layer of beaten egg around the edges of each jam-filled rectangle.
Place the remaining pastry rectangles on top.
Press the edges together with your fingers, then crimp around the edges with a fork to seal them tightly.
5. Add the egg wash
Transfer the pockets to the prepared baking sheet, leaving space between them.
Brush the tops with the remaining beaten egg.
Use a sharp knife to make 2–3 small slits in the top of each pocket. This allows steam to escape.
6. Bake
Bake for 15–20 minutes, until the pastry is puffed, flaky, and deeply golden brown.
7. Cool
Let the pockets cool for at least 10 minutes before serving. The fruit filling will be extremely hot immediately after baking.
