Ingredients

  • 2 pounds (900 g) boneless, skinless chicken breasts, cut into 1-inch cubes
  • 4 cups fresh baby spinach
  • ½ cup sun-dried tomatoes, chopped (oil-packed, drained)
  • 8 oz (225 g) cream cheese, softened
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • ½ teaspoon paprika
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ½ teaspoon salt (or to taste)
  • ¼ teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

Step 1: Preheat

Step 6: Combine

Fold chicken into sauce.

Mix well.


Step 7: Bake

Pour mixture into prepared baking dish.

Top with remaining mozzarella.

Bake:

35–40 minutes

until chicken reaches 165°F (74°C).

Broil 2–3 minutes for a browned cheesy top if desired.


Step 8: Rest

Let stand 5–10 minutes before serving.

Garnish with parsley or basil.
