Stuffed Sweet Potatoes with Spinach, Mushrooms & Mozzarella

Tender roasted sweet potatoes are loaded with garlicky sautéed spinach and mushrooms, then topped with plenty of melty mozzarella and baked until beautifully golden and bubbly. A cozy, satisfying vegetarian meal or hearty side dish!

 Ingredients

For the Sweet Potatoes

  • 4 medium sweet potatoes
  • 1½ tablespoons olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

For the Mushroom & Spinach Filling

  • 2 tablespoons olive oil or butter
  • 8 oz (225 g) mushrooms, thinly sliced
  • 3 cloves garlic, minced
  • 5 oz (140 g) fresh spinach
  • ½ teaspoon Italian seasoning
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon red pepper flakes, optional

For the Topping

  • 1½ cups shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 1 tablespoon chopped fresh parsley, optional

1. Bake the sweet potatoes

Preheat your oven to 400°F (200°C).

Wash and scrub the sweet potatoes well. Pat them dry and prick each potato several times with a fork.

Rub them lightly with olive oil and season with salt and pepper.

Place them on a parchment-lined baking sheet and bake for 45–60 minutes, depending on size, until completely tender when pierced with a knife.

2. Prepare the filling

While the potatoes bake, heat 2 tablespoons olive oil or butter in a large skillet over medium-high heat.

Add the sliced mushrooms and cook for 5–7 minutes, stirring occasionally, until browned and most of their moisture has cooked away.

Add the minced garlic and cook for about 30 seconds.

Add the spinach and cook for 1–2 minutes, just until wilted.

Season with Italian seasoning, salt, black pepper and red pepper flakes if using.

Remove from the heat.

3. Stuff the potatoes

When the sweet potatoes are tender, carefully remove them from the oven.

Let them cool for a couple of minutes, then make a deep slit lengthwise through the center of each potato.

Gently press the ends inward to open the potato.

Fluff the inside slightly with a fork, keeping the potato skin intact.

Divide the mushroom-spinach mixture between the potatoes.

4. Add the cheese

Top each stuffed potato generously with shredded mozzarella and sprinkle with Parmesan.

Return the potatoes to the oven and bake at 400°F (200°C) for 8–12 minutes, until the cheese has melted.

For an extra golden top, switch to the broiler for 1–2 minutes, watching closely so the cheese doesn’t burn.

5. Serve

Sprinkle with fresh parsley and serve hot.
