- 2 cups all-purpose flour
- 2 teaspoons baking powder

- Prepare the apples: Peel and core the apples, then cut them into small pieces. Pat them dry with a paper towel.
- Mix the dry ingredients: In a large bowl, whisk together flour, baking powder, salt, cinnamon, nutmeg and sugar.
- Make the batter: In another bowl, whisk the egg, milk, vanilla and melted butter until smooth.
- Combine: Pour the wet ingredients into the dry ingredients. Stir gently just until combined.
- Add the apples: Fold the diced apples into the batter. The mixture should be thick and scoopable.
- Heat the oil: Pour about 1½–2 inches of oil into a heavy skillet or Dutch oven. Heat to 350°F (175°C).
- Fry: Scoop portions of batter, about 2 tablespoons each, into the hot oil. Fry in small batches so the pan isn’t crowded.
