 Ingredients

For the Soup

  • 1 tablespoon sesame oil or olive oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 8 oz (225 g) mushrooms, sliced
  • 4 cups chicken or vegetable broth
  • 1 tablespoon soy sauce
  • 1 tablespoon chili crisp or chili oil
  • 1–2 teaspoons sriracha, to taste
  • 1 teaspoon rice vinegar
  • 1 teaspoon sesame oil
  • ½ teaspoon black pepper
  • ½ teaspoon red pepper flakes, optional
  • 1 small carrot, thinly sliced
  • 2 cups baby bok choy or spinach
  • 16–20 frozen dumplings or potstickers
  • 2 green onions, sliced
  • Fresh cilantro, for garnish, optional

Optional Toppings

  • Extra chili crisp
  • Sesame seeds
  • Lime wedges
  • Crispy onions
  • Fresh cilantro
  • Soft-boiled egg

 Instructions

1. Sauté the aromatics

Heat 1 tablespoon sesame oil or olive oil in a large soup pot over medium heat.

Add the chopped onion and cook for 2–3 minutes until softened.

Add the garlic and fresh ginger. Cook for another 30 seconds until fragrant.

2. Cook the mushrooms

Add the sliced mushrooms and cook for 5–6 minutes, stirring occasionally, until softened and lightly browned.

3. Build the spicy broth

Pour in the chicken or vegetable broth.

Add:

  • Soy sauce
  • Chili crisp or chili oil
  • Sriracha
  • Rice vinegar
  • Sesame oil
  • Black pepper
  • Red pepper flakes, if using

Stir well and bring the soup to a gentle boil.

4. Add the vegetables

Add the sliced carrots and simmer for 3–4 minutes.

Add the bok choy or spinach and cook until just tender.

5. Cook the dumplings

Add the frozen dumplings directly to the simmering soup.

Cook according to the package directions, usually 5–8 minutes, until heated through and tender.

Avoid boiling too aggressively, as delicate dumplings may break apart.

6. Finish and serve

Taste the broth and adjust the seasoning or spice level if needed.

Ladle the soup into bowls and garnish with sliced green onions, cilantro, sesame seeds, extra chili crisp, or a squeeze of lime juice.

Serve immediately while hot!

 Q&A

Can I use homemade dumplings?

Yes! Homemade chicken, vegetable, pork, or shrimp dumplings all work beautifully. Add them gently to the simmering broth and cook until fully done.

Can I use fresh dumplings instead of frozen?

Absolutely. Fresh dumplings usually cook faster, so follow their specific cooking instructions.

What mushrooms are best?

Cremini, button, shiitake, oyster mushrooms, or a mixture all work well.

Can I make this vegetarian?

Yes. Use vegetable broth and vegetable dumplings.

Can I add protein?

Definitely! Add cooked shredded chicken, thinly sliced beef, tofu, shrimp, or a soft-boiled egg.

Can I make the soup ahead of time?

You can prepare the broth and vegetables up to 2 days ahead. For the best texture, cook the dumplings fresh when you’re ready to serve.

How do I store leftovers?

Store leftover soup in an airtight container in the refrigerator for up to 3 days. Keep in mind that dumplings may soften as they sit in the broth.

Can I freeze this soup?

The broth can be frozen, but it’s best to freeze it without the dumplings, as dumpling wrappers may become soft or fall apart after thawing.

What can I serve with it?

This soup is delicious with:

  • Steamed edamame
  • Cucumber salad
  • Spring rolls
  • Scallion pancakes
  • Extra chili crisp on the side
