Ingredients
For the Roasted Cauliflower & Chickpeas
1 large head cauliflower, cut into bite-size florets
1 can (15 oz/425 g) chickpeas, drained, rinsed, and thoroughly dried
1½ tablespoons olive oil
1 teaspoon smoked paprika
1 teaspoon ground cumin
½ teaspoon garlic powder
½ teaspoon dried oregano
¼ teaspoon turmeric, optional
½ teaspoon salt
¼ teaspoon black pepper
For the Halloumi
8 oz (225 g) halloumi cheese, cut into ½-inch slices or cubes
1 teaspoon olive oil
1 teaspoon fresh lemon juice
Pinch of black pepper
For the Bowl
4 cups mixed greens or baby spinach
1 cup cherry tomatoes, halved
½ cucumber, diced
¼ small red onion, thinly sliced
¼ cup fresh parsley, chopped
2 tablespoons fresh mint, chopped, optional
½ avocado, sliced, optional
Lemon-Herb Dressing
3 tablespoons extra-virgin olive oil
2 tablespoons fresh lemon juice
1 teaspoon lemon zest
1 teaspoon Dijon mustard
1 small garlic clove, finely minced
1 teaspoon honey or maple syrup
½ teaspoon dried oregano
Salt and black pepper, to taste
Instructions
1. Prepare the oven

Preheat the oven to 425°F (220°C). Line a large baking sheet with parchment paper if desired.

2. Season the cauliflower and chickpeas

Add the cauliflower florets and dried chickpeas to a large bowl.

Add olive oil, smoked paprika, cumin, garlic powder, oregano, turmeric, salt, and black pepper. Toss thoroughly until everything is evenly coated.

Spread the mixture over the baking sheet in a single layer. Avoid overcrowding so the cauliflower and chickpeas roast instead of steam.

3. Roast

Roast for 25–30 minutes, tossing once halfway through.

The cauliflower should be browned and tender, while the chickpeas should be slightly crisp.

4. Cook the halloumi

Heat 1 teaspoon olive oil in a large nonstick skillet over medium-high heat.

Add the halloumi and cook for about 2–3 minutes per side, until golden brown.

Remove from the heat and drizzle with lemon juice. Set aside.

5. Make the dressing

Whisk together the olive oil, lemon juice, lemon zest, Dijon mustard, garlic, honey or maple syrup, oregano, salt, and black pepper.

Taste and adjust the lemon, salt, or pepper as desired.

6. Build the bowls

Divide the mixed greens among 4 bowls.

Top each bowl with:

Roasted cauliflower
Crispy chickpeas
Golden halloumi
Cherry tomatoes
Cucumber
Red onion
Fresh parsley
Mint
Avocado, if using

Drizzle generously with the lemon-herb dressing.

7. Serve

Serve the bowls warm, with extra lemon wedges on the side.

Q&A
Q: Can I make this bowl vegan?

A: Yes, except for the halloumi. Replace the halloumi with a suitable plant-based cheese or roasted tofu. Use maple syrup instead of honey in the dressing.

Q: Can I use frozen cauliflower?

A: Yes. Roast it directly from frozen, but give it extra space on the baking sheet so it can brown properly.

Q: Can I use another cheese instead of halloumi?

A: Yes. Feta is a great Mediterranean alternative, although it won’t develop the same golden, chewy texture. Paneer can also work well when pan-seared.

Q: Can I make this bowl ahead of time?

A: Yes. Roast the cauliflower and chickpeas ahead of time and refrigerate them separately from the fresh vegetables and dressing.

Q: How long does it keep?

A: Store components in airtight containers in the refrigerator for 3–4 days. Keep the dressing separate until serving.

Q: Can I eat it cold?

A: Absolutely. It’s delicious warm, at room temperature, or chilled. For the best halloumi texture, however, serve the cheese warm.

Q: How can I make the chickpeas extra crispy?

A: Dry them very thoroughly before roasting and spread them out without overcrowding the pan. A little extra roasting time can make them even crispier.

Q: Can I add more protein?

A: Yes. Add grilled chicken, boiled eggs, lentils, tofu, or extra chickpeas.

Q: What can I use instead of chickpeas?

A: White beans, lentils, or roasted edamame can be substituted.

Q: Can I make this low-carb?

A: Chickpeas contain carbohydrates, so the bowl isn’t very low-carb as written. For a lower-carb version, reduce the chickpeas and increase cauliflower, leafy greens, cucumber, and halloumi.

Q: Is this good for meal prep?

A: Yes. Keep the roasted ingredients, fresh vegetables, halloumi, greens, and dressing in separate containers and assemble just before eating.

Serving Tip

Finish each bowl with fresh lemon juice, chopped parsley, a sprinkle of smoked paprika, and a little extra dressing. The combination of crispy cauliflower, creamy chickpeas, salty golden halloumi, and tangy lemon dressing makes every bite flavorful.
