Frequently Asked Questions
Q: Can I use frozen raspberries?
Yes. Use them straight from the freezer without thawing to reduce excess moisture.
Q: Can I substitute dark or milk chocolate?
Yes, but white chocolate pairs best with raspberries and gives the cake its signature flavor.
Q: Why did my raspberries sink?
Coat them lightly in flour before folding them into the batter, and avoid overmixing.
Q: Can I make this ahead of time?
Yes. Bake the loaf a day in advance and add the glaze the day you plan to serve it.
Q: Can I freeze it?
Yes. Freeze the unglazed loaf tightly wrapped for up to 3 months. Thaw overnight in the refrigerator, then add the fresh glaze before serving.
Q: How do I know when it’s done?
A toothpick inserted into the center should come out clean or with a few moist crumbs, and the internal temperature should be about 200–205°F (93–96°C).
Q: Can I make this into muffins?
Yes. Fill muffin cups about two-thirds full and bake at 350°F (175°C) for 20–25 minutes.
Q: What can I serve with it?
It’s delicious with coffee or tea, or topped with whipped cream, vanilla ice cream, or extra fresh raspberries.
