Crispy Zucchini, Carrot & Cheese Sticks
These golden vegetable sticks are crispy and cheesy on the outside, tender and flavorful inside, and perfect for breakfast, a light lunch, snack, or appetizer. They’re especially delicious served with a creamy garlic-herb dip.
Ingredients
For the Vegetable Sticks
2 medium zucchini, grated
1 large carrot, finely grated
3 green onions, finely chopped
2 large eggs
1 cup shredded mozzarella cheese
½ cup grated Parmesan cheese
½ cup all-purpose flour
½ teaspoon baking powder
1 teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon Italian seasoning
½ teaspoon paprika
½ teaspoon salt
¼ teaspoon black pepper
2 tablespoons fresh parsley, chopped
1 tablespoon olive oil, plus more for cooking if pan-frying
Creamy Garlic-Herb Dip
½ cup Greek yogurt
¼ cup mayonnaise
1 tablespoon fresh lemon juice
1 small garlic clove, finely minced
1 tablespoon fresh dill, chopped
1 tablespoon fresh parsley, chopped
¼ teaspoon garlic powder
¼ teaspoon black pepper
¼ teaspoon salt
Instructions
1. Prepare the zucchini
Grate the zucchini using the large holes of a box grater.
Place it in a colander and sprinkle with a little salt.
Let it sit for 10–15 minutes.
Zucchini contains a lot of water, so this step is important.
2. Squeeze the zucchini very well
Transfer the zucchini to a clean kitchen towel or several layers of paper towels.
Squeeze firmly until you remove as much liquid as possible.
Don’t skip this step. Excess moisture can make the sticks soft and difficult to shape.
3. Prepare the carrot
Finely grate the carrot.
If it is particularly juicy, gently squeeze out a little moisture with paper towels.
4. Make the mixture
In a large bowl, combine:
Squeezed zucchini
Grated carrot
Green onions
Eggs
Mozzarella
Parmesan
Flour
Baking powder
Garlic powder
Onion powder
Italian seasoning
Paprika
Salt
Black pepper
Fresh parsley
Mix thoroughly until you have a thick, cohesive mixture.
If the mixture seems too wet, add 1–2 tablespoons more flour.
5. Shape the sticks
Line a baking sheet with parchment paper.
Take approximately 2 tablespoons of the mixture at a time.
Shape into small logs or sticks approximately 3–4 inches long and ¾ inch thick.
Place them on the prepared baking sheet with a little space between each one.
Oven-Baked Method
Preheat the oven to 425°F (220°C).
Lightly brush the vegetable sticks with olive oil.
Bake for 15 minutes.
Carefully turn them over.
Brush lightly with additional olive oil if needed.
Bake for another 10–12 minutes, until golden brown and crisp.
For an extra-golden finish, broil for 1–2 minutes, watching closely.
Let them cool for 3–5 minutes before serving.
Pan-Fried Method
Heat approximately 1–2 tablespoons olive oil in a large nonstick skillet over medium heat.
Place the vegetable sticks in the pan without overcrowding.
Cook for approximately 3–4 minutes per side, turning gently, until golden brown and cooked through.
Transfer to a paper-towel-lined plate to remove excess oil.
Cook in batches as necessary.
Air Fryer Method
Preheat the air fryer to 375°F (190°C).
Lightly spray the basket with cooking oil.
Place the vegetable sticks in a single layer.
Air fry for 8–10 minutes.
Turn them carefully and cook for another 5–7 minutes, until golden and crisp.
Avoid overcrowding the basket.
Creamy Garlic-Herb Dip
Add Greek yogurt, mayonnaise, lemon juice, garlic, dill, parsley, garlic powder, black pepper, and salt to a small bowl.
Stir until smooth and creamy.
Refrigerate for 15–20 minutes before serving if you have time. This allows the garlic and herbs to develop more flavor.
Serving
Arrange the warm vegetable sticks on a platter.
Place the creamy herb dip in the center.
Garnish with fresh parsley, dill, or sliced green onions.
Serve immediately while the outside is golden and crisp.

Tips for the Best Vegetable Sticks
Squeeze the zucchini!
This is the most important tip. Wet zucchini produces soft, fragile sticks. Squeeze out as much liquid as possible.
Use freshly grated cheese
Freshly grated mozzarella and Parmesan melt better and give the sticks a better texture.
Don’t overcrowd
Whether baking or air-frying, leave space between the sticks so hot air can circulate.
Keep the carrot finely grated
Fine shreds distribute evenly throughout the mixture and cook quickly.
For extra crunch
Replace half of the flour with ½ cup panko breadcrumbs.
For a spicy version
Add:
¼ teaspoon cayenne
½ teaspoon red pepper flakes
1 finely chopped jalapeño
Recipe Q&A
Q: Why are my vegetable sticks falling apart?
A: The zucchini likely contains too much moisture, or the mixture needs a little more flour. Squeeze the zucchini very thoroughly and add 1–2 tablespoons additional flour if necessary.
Q: Can I make these without flour?
A: Yes. You can use breadcrumbs, oat flour, almond flour, or a suitable gluten-free flour. If using almond flour, remember that it changes the nut-allergen status of the recipe.
Q: Can I use oat flour?
A: Yes. Use finely ground oat flour and choose certified gluten-free oats if necessary.
Q: Can I use frozen zucchini?
A: Yes, but thaw it completely and squeeze out as much liquid as possible. Fresh zucchini generally gives a better texture.
Q: Can I make these gluten-free?
A: Yes. Replace the all-purpose flour with a certified gluten-free flour blend.
Q: Can I prepare the mixture ahead of time?
A: Yes. Cover and refrigerate the mixture for up to 24 hours. Give it a gentle stir before shaping.
Q: Can I freeze them?
A: Yes. Bake the sticks first, allow them to cool completely, then freeze them in a single layer. Once frozen, transfer them to a freezer-safe container.
Q: How do I reheat frozen sticks?
A: Air fry at 375°F (190°C) for approximately 8–12 minutes or bake at 400°F (200°C) until hot and crisp.
Q: Can I add chicken?
A: Yes. Add finely shredded cooked chicken for a higher-protein version. Make sure the chicken is fully cooked before mixing.
Q: Can I add other vegetables?
A: Absolutely. Finely grated broccoli stems, bell pepper, spinach, or sweet potato can work well. Avoid adding vegetables with excessive moisture unless you squeeze or drain them first.
Q: How long do leftovers last?
A: Store cooked sticks in an airtight container in the refrigerator for up to 3 days.
Q: What’s the best way to reheat them?
A: The oven or air fryer gives the best texture. Microwaving works but will make them softer.
Q: Can I serve these for breakfast?
A: Yes! They’re delicious with scrambled eggs, Greek yogurt, avocado, or a fresh salad.
