Garlic Cauliflower & Mushrooms
A simple, flavorful vegetable side dish made with tender-crisp cauliflower, golden mushrooms, plenty of garlic, herbs, and Parmesan. It comes together quickly and works beautifully with chicken, steak, fish, or a Mediterranean-style meal.
Ingredients
Main Ingredients
1 large head cauliflower, cut into bite-size florets
12 oz (340 g) mushrooms, sliced
4–5 cloves garlic, minced
2 tablespoons extra-virgin olive oil
1 tablespoon butter
½ small onion, thinly sliced, optional
½ teaspoon salt
½ teaspoon black pepper
1 teaspoon Italian seasoning
½ teaspoon smoked paprika, optional
¼ teaspoon red pepper flakes, optional
2 tablespoons fresh parsley, chopped
¼ cup grated Parmesan cheese
Optional Lemon Finish
1 tablespoon fresh lemon juice
½ teaspoon lemon zest
Instructions
1. Prepare the Vegetables
Wash the cauliflower and cut it into small, evenly sized florets.
Clean the mushrooms with a damp paper towel and slice them.
Pat both vegetables dry. Removing excess moisture helps the mushrooms brown instead of steam.
2. Blanch the Cauliflower — Optional
For especially tender cauliflower, bring a pot of salted water to a boil.
Add the cauliflower and cook for 2–3 minutes.
Drain very well and pat dry.
You can skip this step if you prefer firmer, roasted-style cauliflower.
3. Heat the Pan
Heat a large skillet over medium-high heat.
Add the olive oil and butter.
Once hot, add the mushrooms in a single layer.
Cook for 5–7 minutes, stirring occasionally, until the mushrooms release their moisture and become golden brown.
Tip: Don’t overcrowd the pan. If necessary, cook the mushrooms in batches.
4. Add the Onion
Add the sliced onion, if using.
Cook for another 2–3 minutes, until softened and lightly golden.
5. Add the Cauliflower
Add the cauliflower florets to the skillet.
Season with:
Salt
Black pepper
Italian seasoning
Smoked paprika
Red pepper flakes, if using
Cook for approximately 6–8 minutes, stirring occasionally, until the cauliflower is tender-crisp and lightly browned.
6. Add the Garlic
Add the minced garlic.
Cook for 1–2 minutes, stirring constantly.
Don’t cook the garlic too long or it can become bitter.
7. Finish the Dish
Turn off the heat.
Add the Parmesan cheese and fresh parsley.
Drizzle with fresh lemon juice and add lemon zest if using.
Toss everything together until well combined.
Taste and adjust the salt and pepper.
8. Serve
Transfer to a serving bowl.
Finish with:
Extra Parmesan
Fresh parsley
Lemon zest
Cracked black pepper
A drizzle of olive oil
Serve immediately while warm.

Tips for the Best Garlic Cauliflower & Mushrooms
Get the mushrooms golden
Cook them over medium-high heat and avoid overcrowding the pan. This helps them brown instead of becoming watery.
Dry the vegetables
Excess water prevents good browning.
Add garlic near the end
Garlic burns quickly, so adding it during the final 1–2 minutes gives you better flavor.
Don’t overcook the cauliflower
Tender-crisp cauliflower provides much better texture than mushy cauliflower.
Add lemon at the end
Fresh lemon juice brightens the earthy mushrooms and roasted garlic flavors.
Storage & Reheating
Refrigerator
Store leftovers in an airtight container for 3–4 days.
Reheating
Reheat in a skillet over medium heat for 3–5 minutes.
You can also microwave individual portions, although the vegetables will be softer.
Freezing
Freezing isn’t recommended because mushrooms and cauliflower can become watery after thawing.
Q&A
Can I use frozen cauliflower?
Yes. Thaw and drain it well first. Pat it dry before cooking to prevent excess water.
Can I use frozen mushrooms?
Fresh mushrooms are preferable because they brown better, but frozen mushrooms can be used if thawed and drained thoroughly.
Can I use broccoli too?
Absolutely. Replace half the cauliflower with broccoli for a garlic broccoli-and-mushroom version.
Can I add chicken?
Yes. Add cooked diced chicken toward the end and warm through for a complete one-pan meal.
Can I make this without Parmesan?
Yes. Simply leave it out or replace it with nutritional yeast for a dairy-free version.
Can I use garlic powder instead of fresh garlic?
Fresh garlic gives the best flavor, but you can use about 1½ teaspoons garlic powder if needed.
Why are my mushrooms watery?
The pan may have been overcrowded or the heat too low. Cook mushrooms in a large hot skillet and allow their moisture to evaporate before adding the other ingredients.
Can I roast this instead?
Yes. Toss everything except fresh garlic and Parmesan with olive oil and seasonings. Roast at 425°F (220°C) for 25–30 minutes, adding garlic during the final few minutes.
Is this keto-friendly?
Yes. Cauliflower and mushrooms are relatively low in carbohydrates, and the recipe contains no flour or added sugar.
Is this good for meal prep?
Yes. Portion it alongside chicken, salmon, steak, or another protein for easy lunches and dinners.
Can I make it spicy?
Yes. Add red pepper flakes, cayenne, or sliced fresh chili peppers.
Can I add cheese besides Parmesan?
Yes. Mozzarella, feta, goat cheese, or a little cheddar can all work.
Can I add bacon?
Yes. Crisp chopped bacon makes a delicious addition. Cook the bacon separately, then sprinkle it over the finished vegetables.
Can I make it completely oil-free?
Yes. Use a good nonstick skillet and sauté the vegetables with a small amount of vegetable broth or water, although the finished dish won’t brown quite as deeply.
