No-Churn Strawberry Cheesecake Ice Cream

Yield: about 1.5–1.7 L
Servings: 8–10
Prep: 30 minutes
Cooking: 5–10 minutes
Freezing: 6–8 hours, preferably overnight

Ingredients
Strawberry swirl
450 g fresh strawberries, hulled and chopped
75 g granulated sugar
1 tbsp cornstarch
1 tbsp lemon juice
1 tsp vanilla extract
2 tbsp water
Cheesecake crumble
150 g graham-cracker crumbs
60 g unsalted butter, melted
35 g brown sugar
Pinch of salt
Cheesecake ice cream
225 g full-fat cream cheese, softened
1 × 14-oz / 397-g can sweetened condensed milk
480 ml heavy whipping cream, very cold
2 tsp vanilla extract
1 tbsp fresh lemon juice
1 tsp finely grated lemon zest
¼ tsp salt
For the topping
150–200 g fresh strawberries
2–3 tbsp reserved graham crumble
2–3 tbsp reserved strawberry sauce
1. Make the Strawberry Sauce

Put the chopped strawberries, sugar, cornstarch, lemon juice and water into a saucepan.

Stir thoroughly while cold so the cornstarch doesn’t form lumps.

Place over medium heat.

Cook for approximately 5–8 minutes, stirring frequently.

The strawberries should soften and release their juice, while the mixture becomes thick and glossy.

You want something closer to a thick jam/compote than a thin strawberry syrup.

Remove from the heat.

Stir in vanilla.

Transfer to a bowl.

Cool completely, then refrigerate.

Important: The strawberry mixture must be completely cold before it touches the whipped cream mixture. Hot strawberry sauce can melt and deflate the ice-cream base.

2. Make the Cheesecake Crumble

Preheat oven to 350°F / 175°C.

Mix together:

graham crumbs
melted butter
brown sugar
salt

The mixture should resemble wet sand.

Spread it on a parchment-lined baking sheet.

Bake for approximately 7–8 minutes, until lightly golden and fragrant. This baked crumble method is also used in tested strawberry-cheesecake ice-cream recipes.

Remove from the oven.

Cool completely.

Break it into small pieces.

For the texture in your photograph

Don’t pulverize everything into powder.

Keep approximately:

70% small crumbs
30% slightly larger crunchy pieces

The larger pieces give you those little crunchy pockets throughout the ice cream.

3. Prepare the Cheesecake Base

Make sure the cream cheese is softened to room temperature.

Place it in a large mixing bowl.

Beat for about 1–2 minutes, until completely smooth.

Add:

condensed milk
vanilla
lemon juice
lemon zest
salt

Beat until smooth.

Scrape down the sides of the bowl.

4. Whip the Cream

Pour the cold heavy cream into another chilled bowl.

Beat on medium-high speed until stiff peaks form.

Don’t overbeat it.

You want the cream to hold its shape but still look smooth.

Cold heavy cream is important for getting good volume.

5. Combine

Add approximately ⅓ of the whipped cream to the cream-cheese mixture.

Gently fold it in.

Add another ⅓.

Fold.

Add the remaining whipped cream.

Fold gently until no large streaks remain.

Don’t aggressively stir.

You want to retain as much air as possible.

6. Assemble Like the Photo

Use a freezer-safe container approximately 8 × 8 inches or a similar 1.5–2 L container.

Put approximately half of the ice-cream mixture into the container.

Spread it evenly.

Add:

several spoonfuls strawberry sauce
a handful of crumble

Don’t mix completely.

Instead, drag a butter knife through the strawberry sauce in a few loose swirls.

Add the remaining ice-cream mixture.

Repeat with:

strawberry sauce
crumble
fresh strawberry pieces

Use the knife to make 3–5 gentle swirling motions.

Don’t over-swirl.

You want distinct white-and-red cheesecake layers.

7. Make the Top Look Like Your Photograph

For the photo-style presentation:

Arrange fresh strawberry pieces over the top.

Drizzle a few thin lines of strawberry sauce.

Sprinkle the graham crumble over the center.

Then make one or two gentle swirls with the tip of a spoon.

The goal is:

white cheesecake → red strawberry ribbons → fresh strawberries → golden crumbs.

8. Freeze

Cover the container tightly.

Press plastic wrap directly against the surface if possible, then add the lid.

Freeze for at least 6–8 hours.

Overnight is best.

No-churn strawberry cheesecake recipes commonly use several hours of freezing, with overnight freezing producing a firmer scoopable dessert.

9. Serving

Remove from the freezer.

Let it sit at room temperature for approximately 5–15 minutes depending on the size and depth of the container.

Then scoop.

For the appearance in your photograph, don’t scoop it immediately after removing it from a very cold freezer.

You want the surface just soft enough for the strawberry swirl to become creamy.

The Secret to the Best Texture

There are five particularly important points:

1. Full-fat cream cheese

Reduced-fat cream cheese can produce a less rich result.

2. Very cold heavy cream

Cold cream whips more effectively.

3. Softened cream cheese

Cold cream cheese can leave little lumps.

4. Completely chilled strawberry sauce

Never add warm sauce.

5. Don’t over-swirl

Too much mixing turns the dessert pink and removes the beautiful strawberry ribbons.

Optional: Fresh Strawberry Pieces Inside

For even more strawberry flavor, reserve about 100 g chopped fresh strawberries.

Pat them very dry with paper towels.

Scatter them between the ice-cream layers.

Don’t add huge amounts because excess fresh fruit contains water and can form icy pieces during freezing.

Optional Cheesecake-Crust Layer

If you want the dessert to taste even more like an actual strawberry cheesecake, make an extra crust.

Mix:

1 cup graham crumbs
4 tbsp melted butter
2 tbsp brown sugar
pinch salt

Bake at 350°F / 175°C for 7–8 minutes.

Cool.

Place a thin layer on the bottom of the container before adding the ice cream.

This gives you a real cheesecake-crust layer at the bottom.

Full Recipe Q&A
Can I make this without an ice-cream machine?

Yes. That’s the main advantage of this recipe. No-churn versions are specifically designed to be frozen directly after assembling.

Why is my ice cream icy?

Usually because of excess water.

Common causes are:

watery strawberries
too much fresh fruit
thin strawberry sauce
insufficient fat
an uncovered container
repeated thawing and refreezing

Cook the strawberry sauce until thick and cool it completely.

Why didn’t my ice cream become fluffy?

Your heavy cream may not have been cold enough, or it may have been under-whipped.

Another possibility is folding too aggressively and knocking the air out.

Can I use frozen strawberries?

Yes.

Thaw them first and drain excess liquid.

Frozen strawberries can actually work very well for the sauce.

Can I use strawberry jam?

Yes.

For a shortcut, use approximately ¾ cup good-quality strawberry preserves.

Warm it slightly if needed to make it swirlable, then cool it completely before adding it.

Can I use strawberry puree?

Yes, but reduce it first.

A watery puree can make the ice cream icy.

Can I reduce the sugar?

Yes, but don’t dramatically reduce the condensed milk because it contributes both sweetness and texture.

Instead, reduce the sugar in the strawberry sauce.

Can I use Greek yogurt?

You can replace a portion of the cream cheese, but the result will be tangier and less rich.

For the closest result to the photograph, use cream cheese.

Can I use mascarpone?

Yes.

Replace approximately half of the cream cheese with mascarpone for an exceptionally rich, silky dessert.

Can I add cheesecake chunks?

Absolutely.

Freeze small cubes of cheesecake first, then fold them into the finished base.

This technique is also used in some strawberry cheesecake ice-cream recipes.

Why is my strawberry swirl disappearing?

The sauce is probably too thin or you’re mixing too much.

Make the sauce thicker and use a knife to make only a few swirls.

How do I get the bright red strawberry ribbons shown in the photo?

Use a concentrated strawberry sauce rather than a thin strawberry syrup.

Reserve some sauce for the top and add it after the ice cream has been layered, rather than mixing it completely into the base.

Can I make it less sweet?

Yes.

Use unsweetened strawberries and reduce the sugar in the strawberry sauce, but remember that sweetened condensed milk is essential to the texture of this particular no-churn formula.

How long does it keep?

For best texture and flavor, I’d aim to eat it within 1–2 weeks.

It can remain frozen longer, but repeated freezer storage tends to reduce quality and increase ice-crystal formation.

Can I store it in the plastic container shown in the photo?

Yes, provided the container is food-safe and freezer-safe and has a properly fitting lid.

A shallow container is preferable because it freezes more evenly and makes scooping easier.

Should I put fresh strawberries on top before freezing?

You can, but for the prettiest fresh appearance, add the final fresh strawberries immediately before serving.

If they’re frozen on top for a long time, they can become hard and watery after thawing.

How can I make it taste more like cheesecake?

Increase the cheesecake character with:

extra lemon zest
a little lemon juice
full-fat cream cheese
graham-cracker crumble
a pinch of salt

The combination of tangy cream cheese + lemon + buttery graham crumbs + strawberry is what makes it taste like frozen cheesecake rather than ordinary strawberry ice cream.

Best Photo-Matching Formula

If your goal is specifically to recreate the dessert shown in your picture, I’d use this ratio:

225 g cream cheese
397 g condensed milk
480 ml heavy cream
450 g strawberries
150 g graham crumbs
60 g butter
75 g sugar
lemon + vanilla

Then layer:

ice cream → strawberry sauce → crumble → ice cream → strawberry sauce → fresh strawberries → crumble.

That will give you the thick white cheesecake base, bright strawberry streaks, visible fruit chunks and golden crunchy crumbs seen in the photograph.
