Ingredients

  • 1 cup rolled oats

  • ½ cup unsweetened shredded coconut
  • ½ cup natural peanut butter or almond butter

  • ¼ cup melted coconut oil
  • ¼ cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • Pinch of sea salt
  • 2–4 tablespoons milk (dairy or plant-based), if needed for consistency

Optional Add-ins

  • 2 tablespoons mini dark chocolate chips
  • 1 tablespoon flaxseed meal
  • 1 teaspoon cinnamon
  • 1 scoop chocolate or vanilla protein powder
  • Chopped almonds, pecans, or walnuts

Instructions

Step 1

Pulse the rolled oats in a food processor until they resemble coarse flour.

Step 2

Add:

  • salt

Pulse briefly to combine.

  • honey
  • melted coconut oil
  • vanilla

Blend until a thick dough forms.

Step 4

Step 5

Press the mixture into silicone chocolate molds or a parchment-lined loaf pan about ½ inch thick.

Step 6

Freeze for 30–45 minutes or refrigerate for about 1 hour.

Step 7

Remove from the molds or cut into bite-sized discs.

Store chilled.
