2 tbsp chopped fresh cilantro
Optional Toppings

Guacamole
Pico de gallo
Sliced jalapeños
Lime wedges
Fresh cilantro
Green onions
Instructions
1. Prepare the Zucchini
Preheat oven to 400°F (200°C).
Wash and dry the zucchini. Slice each zucchini lengthwise in half.
Using a spoon, carefully scoop out the center, leaving about ¼ inch (6 mm) of zucchini around the edges so the boats remain sturdy.
Chop about ½ cup of the zucchini flesh and set it aside for the filling.
Place the zucchini boats cut-side up on a large baking sheet.
Brush lightly with olive oil and season with salt and black pepper.
2. Pre-Bake the Zucchini
Bake the empty zucchini boats for 8–10 minutes.
This gives them a head start so the zucchini becomes tender without turning mushy after the filling is added.
Remove from the oven and set aside.
3. Brown the Beef
While the zucchini is pre-baking, heat a large skillet over medium-high heat.
Add the ground beef and cook for 5–7 minutes, breaking it apart with a wooden spoon.
Cook until browned and no longer pink.
If there is a lot of excess grease, drain it carefully.
4. Add Onion & Garlic
Add the diced onion to the skillet.
Cook for 3–4 minutes, until softened.
Add minced garlic and cook for another 30 seconds.
5. Season the Filling
Add:
Chili powder
Cumin
Smoked paprika
Oregano
Salt
Black pepper
Red pepper flakes, if using
Stir well and cook for about 1 minute to bloom the spices.
6. Add the Vegetables
Stir in:
Chopped zucchini flesh
Black beans
Corn
Diced tomatoes
Salsa
Tomato paste
Cook for 4–5 minutes, stirring occasionally, until the mixture is thick and well combined.
Taste and adjust the seasoning.
For a spicier filling, add more chili powder, hot salsa, or diced jalapeño.
7. Fill the Zucchini Boats
Spoon the Mexican beef mixture generously into each pre-baked zucchini boat.
Don’t worry about slightly overfilling them—the filling can mound nicely above the zucchini.
8. Add the Cheese
Sprinkle the cheddar and Monterey Jack or Mexican-blend cheese generously over each stuffed zucchini.
9. Bake
Return the zucchini boats to the oven.
Bake at 400°F (200°C) for 15–20 minutes, until:
The zucchini is tender.
The filling is hot.
The cheese is completely melted and bubbly.
For a beautifully browned top, switch to broil for 1–2 minutes at the end. Watch carefully because the cheese can brown quickly.
10. Garnish & Serve
Remove from the oven and allow the zucchini boats to rest for 5 minutes.
Sprinkle generously with fresh cilantro.
Serve with sour cream, avocado, pico de gallo, jalapeños, and lime wedges if desired.
Tips for Perfect Stuffed Zucchini
Don’t scoop too deeply.
Leave enough zucchini around the edges and bottom so the boats don’t collapse.
Pre-bake the zucchini.
This helps ensure tender zucchini without requiring the filling to overcook.
Drain the tomatoes well.
Too much liquid can make the filling watery.
Don’t overcook the filling.
Everything is already cooked before the final bake, so the final 15–20 minutes are mainly for tenderizing the zucchini and melting the cheese.
Want extra crispy cheese?
Broil for 1–2 minutes at the end.

Q&A
Can I use ground turkey instead of beef?
Yes. Ground turkey works very well and makes the dish lighter.
Do I have to pre-bake the zucchini?
It’s recommended, especially if your zucchini are large. It helps them become tender while keeping the filling from becoming overcooked.
Can I use canned corn?
Absolutely. Drain it well before adding it.
Can I use canned tomatoes?
Yes. Drain them thoroughly. Diced tomatoes, fire-roasted tomatoes, or Rotel-style tomatoes all work.
Can I use taco seasoning?
Yes. Replace the individual spices with about 1½–2 tablespoons taco seasoning, depending on how strong you want the flavor.
Can I make these ahead of time?
Yes. Prepare the zucchini and filling, assemble the boats, cover, and refrigerate for up to 24 hours. Bake when ready, adding a few extra minutes if they’re cold from the refrigerator.
Why are my zucchini boats watery?
Zucchini naturally contains a lot of water. Pre-baking, avoiding excess liquid in the filling, and draining the tomatoes and beans well will help.
Can I make these without beans?
Yes. Simply leave them out and add extra beef, corn, peppers, or zucchini.
Can I add rice?
Yes. Add about 1 cup cooked rice to the filling. Mexican-seasoned rice works especially well.
Can I make them spicier?
Definitely! Add jalapeño, hot salsa, cayenne, or your favorite Mexican hot sauce.
How do I know the zucchini is done?
The zucchini should be tender enough to pierce easily with a fork but still sturdy enough to hold the filling.
Can I use chicken?
Yes. Cooked shredded chicken is an excellent substitute for ground beef.
