Chickpea Avocado Salad

A bright, satisfying salad made with creamy avocado, hearty chickpeas, crisp vegetables, fresh herbs and a zesty lemon dressing. It’s naturally vegetarian, easy to make, and perfect for lunch, meal prep or a light dinner.

Ingredients
For the Salad
2 cans (400 g each) chickpeas, drained and thoroughly rinsed
2 large ripe avocados, diced
1 cup cherry tomatoes, halved
½ large cucumber, diced
½ small red onion, finely diced
½ red capsicum, diced
¼ cup fresh parsley, chopped
2 tablespoons fresh coriander/cilantro, chopped, optional
2 tablespoons crumbled feta cheese, optional
2 tablespoons pumpkin seeds, optional
Lemon Dressing
3 tablespoons extra-virgin olive oil
2 tablespoons fresh lemon juice
1 tablespoon red wine vinegar
1 teaspoon Dijon mustard
1 small garlic clove, finely minced
½ teaspoon honey or maple syrup, optional
½ teaspoon dried oregano
½ teaspoon salt
¼ teaspoon freshly ground black pepper
Method
1. Prepare the chickpeas

Drain the chickpeas and rinse them thoroughly under cold running water.

Pat them dry with paper towel if you have time. Removing excess moisture helps prevent the salad from becoming watery.

Place the chickpeas in a large mixing bowl.

2. Prepare the vegetables

Add the diced cucumber, cherry tomatoes, red onion and capsicum to the bowl.

Add the chopped parsley and coriander/cilantro if using.

Gently toss everything together.

3. Add the avocado

Cut the avocados in half, remove the stones and scoop out the flesh.

Dice into bite-sized pieces and add to the bowl.
