High-Protein Strawberry Cheesecake Fluff (Makes 8 cups)

Ingredients

  • 2 cups (480 g) plain nonfat Greek yogurt
  • 8 oz (225 g) light cream cheese, softened
  • 2 scoops (60 g) vanilla whey protein powder
  • 1 package (3 oz / 85 g) sugar-free strawberry gelatin powder
  • 1½ cups (360 ml) cold skim milk (or unsweetened almond milk)
  • 1½ cups frozen strawberries
  • 1 teaspoon vanilla extract
  • Sweetener to taste (2–4 tablespoons powdered erythritol or your preferred sweetener)
  • Optional:
    • 1 cup light whipped topping (folded in for extra fluffiness)
    • Fresh strawberries for garnish

Instructions

  1. Blend the Greek yogurt, cream cheese, milk, protein powder, vanilla, and sweetener until completely smooth.
  2. Add the frozen strawberries and blend again until creamy.
  3. Sprinkle in the dry strawberry gelatin powder and blend for 20–30 seconds.
  4. If using whipped topping, gently fold it in with a spatula.
  5. Divide into 8 meal-prep containers.
  6. Refrigerate for at least 2 hours before serving.

  • Protein: 18–22 g
  • Carbohydrates: 6–9 g

Extra Fluffy Version

For a mousse-like texture similar to the photo:

  • Add 1 teaspoon xanthan gum while blending.
  • Whip for 2–3 minutes with a hand mixer after blending.
  • Chill overnight for the best texture.

  • Light whipped cream
  • Fresh raspberries or strawberries
  • Crushed freeze-dried strawberries
  • Graham cracker crumbs (for a cheesecake flavor)
