Ingredients
For the Chicken
1½ lb (680 g) boneless, skinless chicken breasts or thighs
1 tbsp olive oil
1 tsp dried oregano
½ tsp paprika
½ tsp garlic powder
½ tsp salt
¼ tsp black pepper
For the Garden Vegetables
1 medium zucchini, sliced into half-moons
1 red bell pepper, sliced
1 small yellow bell pepper, sliced
1 cup cherry tomatoes, halved
½ small red onion, thinly sliced
3 cloves garlic, minced
2 cups fresh spinach
½ cup Kalamata olives, pitted and sliced, optional
For the Garlic-Lemon Sauce
½ cup low-sodium chicken broth
Juice of 1 large lemon, about 2–3 tbsp
1 tsp lemon zest
1 tbsp extra-virgin olive oil
1 tsp dried oregano
½ tsp dried thyme
¼ tsp red pepper flakes, optional
For Finishing
½ cup crumbled feta cheese
2 tbsp fresh parsley, chopped
1 tbsp fresh dill, optional
Lemon wedges
Freshly cracked black pepper
Instructions
1. Prepare the Chicken

Pat the chicken dry with paper towels.

If using chicken breasts, slice them horizontally into thinner cutlets or pound them to an even thickness. This helps them cook quickly and evenly.

Season both sides with:

Oregano
Paprika
Garlic powder
Salt
Black pepper

Set aside for a few minutes.

2. Sear the Chicken

Heat 1 tablespoon olive oil in a large skillet over medium-high heat.

Add the chicken in a single layer.

Cook for approximately 4–5 minutes per side, depending on thickness, until nicely golden.

The chicken does not need to be completely cooked through at this stage.

Transfer it to a plate and set aside.

3. Cook the Vegetables

Using the same skillet, add the sliced red onion, zucchini, and bell peppers.

Cook for 4–5 minutes, stirring occasionally.

Add the minced garlic and cook for another 30–60 seconds, until fragrant.

4. Add the Tomatoes

Add the halved cherry tomatoes.

Cook for 2–3 minutes, allowing the tomatoes to soften and release some of their juices.

If using Kalamata olives, stir them in now.

5. Make the Garlic-Lemon Sauce

In a small bowl, whisk together:

Chicken broth
Lemon juice
Lemon zest
Olive oil
Oregano
Thyme
Red pepper flakes

Pour the mixture into the skillet.

Scrape the bottom of the skillet with a wooden spoon to loosen all those flavorful browned bits.

6. Return the Chicken

Place the seared chicken back into the skillet.

Spoon some of the lemon-garlic sauce and vegetables over the chicken.

Reduce heat to medium-low.

Cover and cook for approximately 6–10 minutes, depending on the thickness of the chicken.

The chicken should reach an internal temperature of 165°F (74°C).

7. Add the Spinach

Remove the lid and add the fresh spinach.

Gently stir it into the vegetables and sauce.

Cook for 1–2 minutes, just until the spinach wilts.

8. Add the Feta

Turn off the heat.

Sprinkle the crumbled feta over the chicken and vegetables.

Add fresh parsley and dill.

Don’t stir the feta too much—you want some creamy crumbles to remain visible throughout the skillet.

9. Finish & Serve

Add freshly cracked black pepper and an extra squeeze of lemon.

Serve immediately with lemon wedges on the side.

Serving Suggestions

This chicken skillet is delicious on its own, but you can serve it with:

Brown rice
Quinoa
Couscous
Cauliflower rice
Roasted potatoes
Warm pita bread
Greek salad
Tzatziki
Orzo
Crusty whole-grain bread
For a Low-Carb Meal

Serve it over cauliflower rice or simply enjoy it as-is with extra vegetables.

Tips for the Best Mediterranean Chicken
Don’t overcrowd the skillet

If your chicken pieces are large, sear them in batches. Overcrowding causes them to steam instead of brown.

Use fresh lemon

Fresh lemon juice and zest give the sauce a much brighter Mediterranean flavor than bottled lemon juice.

Don’t overcook the chicken

Use a thermometer and remove the chicken once it reaches 165°F (74°C).

Add feta at the end

Feta doesn’t need to cook. Adding it after turning off the heat keeps its texture and salty flavor intact.

Use chicken thighs for extra juiciness

Boneless, skinless thighs are especially forgiving and work beautifully in this recipe.

Easy Variations
Greek-Style Chicken Skillet

Add:

Kalamata olives
Cucumber
Fresh dill
Extra oregano
Tzatziki for serving
Creamy Mediterranean Chicken

Stir ¼ cup heavy cream or Greek yogurt into the sauce after removing the skillet from high heat.

If using Greek yogurt, temper it with a little warm sauce first to prevent curdling.

Spicy Mediterranean Chicken

Add:

½ tsp red pepper flakes
Sliced jalapeño
A pinch of cayenne
Extra Vegetable Version

Add:

Mushrooms
Broccoli
Artichoke hearts
Green beans
Eggplant
Chicken & Chickpea Version

Add 1 cup drained and rinsed chickpeas along with the tomatoes for extra fiber and plant protein.

Storage & Meal Prep
Refrigerator

Store leftovers in an airtight container for up to 3–4 days.

Reheating

Reheat gently in a skillet over medium-low heat or microwave until heated through.

Add a splash of broth if the sauce has thickened.

Freezing

The cooked chicken and vegetables can be frozen for up to 2–3 months, although zucchini and feta may change texture slightly after thawing.

For the best result, freeze the chicken and vegetables without the fresh feta and add fresh feta after reheating.

Q&A
Can I use chicken thighs instead of chicken breasts?

Absolutely. Boneless, skinless thighs are excellent and tend to stay particularly juicy.

Can I use frozen vegetables?

Yes, although fresh vegetables will give you better texture. If using frozen vegetables, don’t thaw them completely before cooking.

Can I use spinach instead of kale?

Yes. Spinach is perfect and only needs a couple of minutes to wilt.

Can I use another cheese instead of feta?

Yes. Goat cheese, Parmesan, or crumbled cotija can work, although feta gives the dish its classic Mediterranean flavor.

Can I leave out the olives?

Of course. They’re completely optional.

Can I add chickpeas?

Yes. Add 1 cup drained chickpeas with the tomatoes for a heartier meal.

Why did my sauce become watery?

Vegetables such as zucchini and tomatoes naturally release water. Cook uncovered for a few additional minutes to reduce the sauce.

Can I make this ahead?

Yes. You can cook the entire skillet ahead of time and refrigerate it. Reheat gently and add fresh feta and herbs just before serving.

Can I make this in the oven?

Yes. Sear the chicken and vegetables in an oven-safe skillet, then finish in a 375°F (190°C) oven until the chicken reaches 165°F (74°C).

Can I use bottled lemon juice?

You can, but fresh lemon juice and zest provide significantly better flavor.

What if I don’t have fresh herbs?

Use about 1 teaspoon dried parsley or dill, although fresh herbs provide a brighter finish.

How do I prevent dry chicken?

Use evenly sized chicken pieces, don’t overcook them, and check the thickest part with a thermometer.

Can I make it creamy?

Yes. Stir in a small amount of heavy cream at the end, or add Greek yogurt off the heat for a lighter creamy sauce.

Is this good for meal prep?

Yes. Portion the chicken and vegetables into containers and add fresh lemon and feta after reheating.
