FULL LEMON LUSH DESSERT RECIPE

Yield: 12–16 generous squares

Ingredients
1. Buttery pecan crust
1 cup (125 g) all-purpose flour
½ cup (113 g) unsalted butter, softened
½ cup (55–60 g) finely chopped pecans
2 tablespoons granulated sugar
¼ teaspoon salt

For a less nutty crust: use 1½ cups graham-cracker crumbs + 5 tablespoons melted butter + 2 tablespoons sugar instead.

The pecan/flour/butter crust is a traditional version of Lemon Lush; other versions use graham crackers or shortbread.

2. Cream cheese layer
8 oz (226 g) full-fat cream cheese, softened
1 cup (115–120 g) powdered sugar
1 teaspoon finely grated lemon zest
1 tablespoon fresh lemon juice
8 oz (227 g) whipped topping, thawed
3. Lemon pudding layer
2 boxes (3.4 oz/96 g each) instant lemon pudding mix
3 cups (720 ml) cold whole or 2% milk
1–2 tablespoons fresh lemon juice, optional
1 teaspoon lemon zest, optional

Using two small boxes of instant lemon pudding with about 3 cups of milk is a common 9×13-inch preparation.

4. Top layer
8 oz (227 g) whipped topping, thawed
1–2 teaspoons finely grated lemon zest
2 tablespoons finely chopped toasted pecans, optional

STEP-BY-STEP DIRECTIONS
Step 1 — Prepare the pan

Preheat oven to 350°F (175°C).

Lightly grease a 9×13-inch baking dish.

Step 2 — Make the pecan crust

Put into a bowl:

flour
softened butter
chopped pecans
sugar
salt

Mix with a pastry cutter, fork, or your fingertips until the mixture resembles coarse crumbs and holds together when squeezed.

Important:

Don’t overmix it into a smooth dough.

Press the mixture firmly and evenly into the bottom of the baking dish.

Bake at 350°F for 20–25 minutes, until the edges and surface are lightly golden.

Remove from the oven and allow it to cool completely.

A completely cooled crust is important because putting the cream-cheese mixture onto a hot crust can make the layers soft. Traditional versions bake the flour-and-pecan crust and then cool it before layering.

Step 3 — Make the cream-cheese layer

Make sure the cream cheese is at room temperature.

Beat:

8 oz cream cheese
1 cup powdered sugar

until completely smooth.

Add:

lemon zest
lemon juice

Beat again.

Fold in 8 oz whipped topping.

Mix just until smooth and fluffy.

Don’t overbeat.

You want a light, mousse-like consistency.

Spread this mixture evenly over the completely cooled crust.

Put the pan in the refrigerator for about 20–30 minutes while preparing the pudding.

Step 4 — Make the lemon pudding

In a large bowl combine:

2 boxes instant lemon pudding
3 cups cold milk

Whisk vigorously for about 2 minutes.

Let it stand for another 2–5 minutes until noticeably thick.

For a stronger lemon flavor, whisk in:

1–2 tablespoons fresh lemon juice
1 teaspoon lemon zest
Important

Use instant pudding, not cook-and-serve pudding.

The pudding should be thick enough that it can sit on the cream-cheese layer without running.

Step 5 — Add the pudding layer

Carefully spoon the lemon pudding over the cream-cheese layer.

Spread gently with a spatula.

Don’t press too hard, or you may mix the two layers.

Spread the remaining 8 oz whipped topping evenly over the lemon pudding.

Make the surface smooth.

Step 7 — Garnish

You can also add very small pieces of lemon zest across the top.

What nut is traditionally used?

Pecans are the best match for this version.

They give the crust a buttery, slightly caramel-like flavor.

Can I use walnuts?

Yes.

Use ½ cup finely chopped walnuts instead of pecans.

The flavor will be a little more earthy and slightly less sweet.

Can I use almonds?

Yes, but finely ground almonds work better than large pieces.

Can I leave the nuts out?

Absolutely.

For a nut-free dessert, use:

1½ cups graham-cracker crumbs + 5 tablespoons melted butter + 2 tablespoons sugar.

Press into the pan and bake at 350°F for about 8–10 minutes, then cool completely.

Important allergy note

If you’re avoiding nuts because of an allergy, don’t simply remove the pecans from a recipe. Check the labels of the graham crackers, pudding mix, whipped topping, cream cheese, and other packaged ingredients for allergen/cross-contact information.

Also use clean equipment and a baking dish that hasn’t been contaminated with nuts.

CAN I MAKE IT WITHOUT INSTANT PUDDING?

Yes, but it becomes a different recipe.

You can make homemade lemon pastry cream/pudding, but don’t substitute it 1:1 for instant pudding without adjusting the recipe. Instant pudding is specifically formulated to set with cold milk.

For the easiest version, stick with instant lemon pudding.

TIPS FOR PERFECT LEMON LUSH
1. Soften the cream cheese

Room-temperature cream cheese produces a much smoother layer.

2. Cool the crust completely

This is one of the biggest secrets to distinct layers.

3. Use cold milk

The pudding layer needs cold milk to set properly.

4. Don’t make the pudding too thin

If the pudding is runny, the finished dessert will slide apart.

5. Don’t add too much lemon juice

Fresh lemon juice gives wonderful flavor, but excessive liquid can interfere with the texture.

6. Chill overnight

This is the best option if you’re making it for guests.

7. Don’t freeze it for ordinary storage

Freezing can change the texture of the pudding and whipped topping after thawing.
