Golden and crispy on the outside, tender inside, and packed with garlic and Parmesan flavor. This easy roasted cauliflower makes a delicious side dish, snack, or healthy addition to almost any meal.

Ingredients

Serves: 4–6
Prep time: 10 minutes
Roasting time: 25–35 minutes
Total time: About 40 minutes

For the Cauliflower
1 large head cauliflower, cut into bite-size florets
3 tbsp olive oil
3 cloves garlic, minced
½ tsp smoked paprika
½ tsp garlic powder
½ tsp Italian seasoning
½ tsp salt
¼ tsp black pepper
¼ tsp red pepper flakes, optional
â…“ cup grated Parmesan cheese
2 tbsp chopped fresh parsley
1 tbsp fresh lemon juice
Optional Crispy Topping
2 tbsp breadcrumbs or panko
1 tbsp extra Parmesan
1 tsp olive oil
Instructions
1. Preheat the Oven

Preheat oven to 425°F (220°C).

For extra crispiness, place a large baking sheet in the oven while it preheats.

2. Prepare the Cauliflower

Wash the cauliflower and dry it very thoroughly. Excess water will cause the cauliflower to steam instead of roast.

Cut into similar-sized florets so they cook evenly.

3. Season

Place the cauliflower in a large bowl.

Add olive oil, minced garlic, smoked paprika, garlic powder, Italian seasoning, salt, black pepper, and red pepper flakes.

Toss until every piece is lightly coated.

4. Arrange on the Baking Sheet

Carefully remove the hot baking sheet.

Spread the cauliflower in one single layer, leaving space between the pieces.

For the crispiest edges, place some florets cut-side down against the baking sheet.

5. Roast

Roast for 20 minutes.

Remove the tray and turn the cauliflower pieces.

Return to the oven and roast for another 8–15 minutes, until deeply golden and crispy around the edges.

6. Add Parmesan

Remove the cauliflower from the oven.

Sprinkle with Parmesan and return to the oven for 2–3 minutes, just until the cheese melts and becomes lightly golden.

7. Finish

Transfer to a serving dish.

Sprinkle with fresh parsley and drizzle with lemon juice.

Serve immediately while hot and crispy.

Tips for Extra-Crispy Cauliflower
Dry the cauliflower extremely well before seasoning.
Don’t overcrowd the baking sheet.
Use a metal baking sheet for better browning.
Preheating the baking sheet helps create a crispy bottom.
Cut larger florets in half so they have a flat surface for browning.
Don’t use too much oil—excess oil can make the cauliflower greasy rather than crisp.
For maximum crispiness, roast at 425°F–450°F (220–230°C).

Q&A

Why isn’t my cauliflower crispy?
The most common causes are excess moisture and overcrowding. Dry the cauliflower well and spread it out so the pieces have plenty of space.

Should I boil the cauliflower first?
No. For crispy roasted cauliflower, roasting it directly from raw gives the best texture.

Can I use frozen cauliflower?
Yes, but fresh cauliflower usually gets crispier. If using frozen, roast it directly from frozen and avoid thawing it first.

Can I make this without Parmesan?
Yes. The cauliflower will still become crispy and flavorful. You can use nutritional yeast or a dairy-free Parmesan alternative.

Can I add breadcrumbs?
Absolutely. Toss the cauliflower with 2 tablespoons panko before roasting for an extra-crispy coating.

Can I make it in an air fryer?
Yes. Air fry at 400°F (200°C) for about 12–18 minutes, shaking the basket halfway through.

Can I prepare it ahead of time?
You can cut and season the cauliflower a few hours ahead, but roast it just before serving for the best crispiness.

How do I store leftovers?
Refrigerate in an airtight container for up to 3–4 days.

How do I reheat it without making it soggy?
Reheat in an oven or air fryer at 400°F (200°C) until hot and crisp. Avoid microwaving if you want to preserve the crispy texture.

Can I freeze roasted cauliflower?
Yes, but it will be softer after thawing. Reheat it in a hot oven or air fryer to restore some crispness.

Is roasted cauliflower keto-friendly?
Cauliflower is naturally low in carbohydrates, but the exact carbohydrate count depends on the ingredients and portion size.

What can I serve with it?
It pairs well with grilled chicken, salmon, steak, shrimp, turkey, roasted vegetables, or a fresh Mediterranean salad.
