Ingredients

  • 4 cups Ripe cantaloupe or honeydew melon
  • 2 tbsp Fresh lime juice
  • 8 leaves Fresh mint leaves
  • 1 tbsp Honey or agave syrup
  • ½ cup Cold water or coconut water
  • to taste Pinch of salt
  • for garnish Fresh berries or microgreens

Method

  1. Chill Your Ingredients: Place melon cubes in the refrigerator for at least 1 hour.
  2. Blend to Silkiness: In a blender, combine melon, lime juice, mint leaves, honey/agave (if using), cold water, and salt. Blend until perfectly smooth.
  3. Taste and Adjust: Check sweetness and acidity. Add a touch more lime for tang, or a drizzle more honey if you prefer it sweeter.
  4. Strain for Elegance (Optional): For a fine-dining finish, pass the soup through a fine mesh sieve to remove any pulp.
  5. Serve Chilled: Pour into chilled bowls or glasses. Garnish with fresh berries or microgreens.

Notes

  • Chill Before You Blend: Start with well-chilled melon. Cold fruit blends smoother, holds its sweetness, and keeps the soup vibrant without needing ice.
  • Mint with Moderation: Mint can uplift or overwhelm, use just enough to refresh without stealing the melon’s spotlight.
  • Lime’s Gentle Touch: Add lime juice gradually. Too much will turn the soup tart rather than bright. Aim for balance, not dominance.
  • Sweetness in Check: Taste your melon before adding honey or agave. Perfectly ripe fruit may need no extra sweetener at all.
  • Serve Ice-Cold: This soup shines when served immediately in chilled bowls or glasses. That frosty edge is part of its summer charm.
