Ingredients
  

  • 1 ib Italian sausage
  • 1 medium Yellow onion
  • 3 cloves Garlic, minced
  • 4 cups Russet potatoes, sliced thin
  • 5 cups Chicken broth
  • 1 cup Heavy cream
  • 3 cups Kale, chopped
  • ½ tsp Crushed red pepper flakes
  • To taste Salt
  • ½ tsp Black pepper

Method
 

  1. Brown the Sausage: In a skillet over medium heat, cook the sausage until browned and crumbly. Drain excess fat.
  2. Sauté Aromatics: Add diced onions and garlic to the same pan. Sauté for 2-3 minutes until soft.
  3. Load the Crockpot: Add browned sausage, sautéed aromatics, thinly sliced potatoes, and chicken broth to your crockpot. Stir gently to combine.
  4. Slow Cook: Cook on LOW for 5–6 hours or HIGH for 3–4 hours, until potatoes are fork-tender.
  5. Stir in Kale & Cream: About 30 minutes before serving, stir in chopped kale and heavy cream. Let it continue cooking until kale is wilted and flavors are well melded.
  6. Taste & Adjust: Season with salt and black pepper to taste.
  7. Serve & Garnish: Ladle into bowls and top with shaved Parmesan. Serve hot with crusty bread.
