Creamy Mandarin Orange Cottage Cheese Salad
A creamy, fluffy, refreshing fruit salad made with cottage cheese, juicy mandarin oranges, pineapple, and whipped topping. It works beautifully as a light dessert, brunch side, or sweet snack.
Ingredients
Servings: 6–8
Prep time: 15 minutes
Chill time: 1–2 hours
Total time: About 2 hours
For the Salad
2 cups cottage cheese
1½ cups mandarin orange segments, drained
1 cup crushed pineapple, very well drained
1 cup whipped topping, thawed
1 package (3.4 oz / 96 g) instant vanilla pudding mix
½ teaspoon vanilla extract
1–2 tablespoons honey or granulated sugar, optional
¼ cup shredded sweetened coconut, optional
For Garnish
Extra mandarin orange segments
A little whipped topping
Optional shredded coconut
Instructions
1. Drain the fruit
Drain the mandarin oranges and crushed pineapple thoroughly. Pat the oranges gently with paper towels if they contain a lot of liquid.
Tip: Excess liquid is the main reason creamy fruit salads become watery.
2. Prepare the cottage cheese
Add the cottage cheese to a large mixing bowl.
For a completely smooth and creamy texture, blend the cottage cheese for 30–60 seconds before using it. If you prefer texture, leave it as-is.
3. Make the creamy mixture
Add the vanilla pudding mix and vanilla extract to the cottage cheese. Stir until well combined.
Taste and add honey or sugar if you want it sweeter.
4. Fold in the whipped topping
Gently fold in the whipped topping using a spatula. Mix just until fluffy and combined.
5. Add the fruit
Gently fold in the drained mandarin oranges and crushed pineapple.
If using coconut, fold it in at this stage.
6. Chill
Cover the bowl and refrigerate for at least 1–2 hours. Chilling allows the pudding mixture to thicken and the flavors to blend.
7. Garnish and serve
Transfer to a serving bowl and top with extra mandarin orange segments and a little whipped topping.
Serve cold.
Helpful Tips
For the creamiest salad: Blend the cottage cheese before mixing.
For a thicker salad: Refrigerate overnight.
Don’t skip draining: Wet fruit can make the finished salad runny.
For extra citrus flavor: Add ½ teaspoon finely grated orange zest.
For more protein: Use higher-protein cottage cheese.
For less sweetness: Skip the added honey/sugar.
For extra crunch: Add chopped nuts immediately before serving.
Nut & Allergen Information
Nuts
No nuts are required for this recipe.
Optional nuts include:
Chopped pecans
Chopped walnuts
Sliced almonds
If adding nuts, sprinkle them on individual servings if you’re serving people with allergies.
Dairy
Contains dairy from the cottage cheese and whipped topping.
For a dairy-free version, use dairy-free cottage cheese and dairy-free whipped topping, although the texture may vary.
Gluten
The basic ingredients are generally naturally gluten-free, but always check the pudding mix, whipped topping, and other packaged ingredients for the manufacturer’s gluten information.
Eggs
The basic recipe does not require eggs, but check packaged whipped topping and pudding ingredients if preparing for an allergy.
Soy
Some commercial whipped toppings and pudding mixes may contain soy or be manufactured on shared equipment. Check the package label.
Coconut
Coconut is optional. Although coconut is botanically a fruit rather than a tree nut, people with allergies should follow their healthcare professional’s guidance and check labels.
Allergy Safety
For someone with a severe allergy, check every packaged ingredient for allergen statements and cross-contact warnings, and use products specifically appropriate for that allergy.
Q&A
Can I use fresh mandarin oranges?
Yes. Peel them, separate into segments, remove excess white pith, and use them in place of canned mandarins.
Can I leave out the pineapple?
Absolutely. You can replace it with additional mandarin oranges or another well-drained fruit.
Can I use Greek yogurt instead of cottage cheese?
Yes. Plain or vanilla Greek yogurt works, although the finished salad will be tangier and have a different texture.
Can I make this without whipped topping?
Yes. Whipped heavy cream can be used instead. Whip it until fluffy before folding it into the mixture.
Can I use sugar-free pudding mix?
Yes. It works well if you want to reduce the added sugar.
Why did my salad become watery?
The most common cause is fruit that wasn’t drained thoroughly. Cottage cheese can also release liquid over time. Drain the fruit well and keep the salad refrigerated.
Can I add marshmallows?
Yes. Mini marshmallows make this more like a traditional fluffy fruit salad.
Can I add nuts?
Yes. Pecans, walnuts, or sliced almonds are delicious. Add them shortly before serving so they stay crunchy.
How long does it last in the refrigerator?
Store covered and refrigerated for approximately 2–3 days. The fruit may release some liquid as it sits.
Can I freeze it?
Freezing is not recommended because the cottage cheese and fruit can change texture and become watery after thawing.
Can I prepare it the night before?
Yes. In fact, chilling overnight can give it an even thicker, more developed texture.
