Full Recipe
Yield: 1 large round loaf, about 8–10 servings
Prep: 25 minutes
Rise: 1½–2 hours
Bake: 35–45 minutes
Total: about 2½–3 hours
Ingredients
For the dough
3 cups (360 g) all-purpose flour
¼ cup (50 g) granulated sugar
2¼ tsp (7 g) instant or active dry yeast
¾ tsp salt
¾ cup (180 ml) warm whole milk, about 105–110°F (40–43°C)
1 large egg
4 tbsp (56 g) unsalted butter, melted and slightly cooled
1 tsp vanilla extract
1 tsp finely grated lemon zest, optional
Blueberry filling
1½ cups (225 g) fresh blueberries
2 tbsp granulated sugar
1 tbsp cornstarch
1 tbsp lemon juice
½ tsp vanilla extract
If using frozen blueberries: don’t thaw them first.
Cream cheese filling
8 oz (226 g) full-fat cream cheese, softened
⅓ cup (67 g) granulated sugar
1 large egg yolk
1 tsp vanilla extract
1 tbsp all-purpose flour
Pinch of salt
For the top
1 egg
1 tbsp milk
1 tbsp coarse sugar, optional
1 tbsp melted butter, optional
Step-by-Step Instructions
1. Activate the yeast
If using active dry yeast, combine:
warm milk
1 tsp of the sugar
yeast
Let stand for 5–10 minutes.
It should become slightly foamy.
If using instant yeast, you can add it directly with the dry ingredients.
Important: Milk that is too hot can kill the yeast.
2. Make the dough
In a large bowl, combine:
flour
remaining sugar
salt
yeast mixture
Add:
egg
melted butter
vanilla
lemon zest
Mix until a shaggy dough forms.
Knead for approximately 8–10 minutes by hand, or 5–7 minutes in a stand mixer fitted with a dough hook.
The finished dough should be:
soft
elastic
slightly tacky
not excessively sticky
If it’s very wet, add flour 1 tablespoon at a time.
Avoid adding too much flour—the bread will become dense.
🫐 3. Make the blueberry mixture
Place blueberries in a small saucepan.
Add:
sugar
cornstarch
lemon juice
vanilla
Cook over medium-low heat for approximately 4–6 minutes, gently stirring.
The berries should begin releasing juice and the mixture should become slightly thickened.
Don’t completely cook the blueberries into jam.
You want some berries to remain recognizable.
Remove from the heat and cool completely.
Why cool it?
Hot blueberry filling can melt the butter in the dough and soften the dough excessively.
4. Make the cream cheese filling
Beat together:
softened cream cheese
sugar
egg yolk
vanilla
flour
salt
Mix until smooth.
Don’t overbeat.
The small amount of flour helps stabilize the filling during baking.
5. First rise
Place the dough into a lightly greased bowl.
Cover with plastic wrap or a clean kitchen towel.
Let rise in a warm place for approximately:
60–90 minutes
or until approximately doubled in size.
The exact time depends on room temperature.
🫐🧀 6. Assemble the loaf
Gently deflate the dough.
Place it on a lightly floured surface.
Roll or stretch it into a rectangle approximately 12 × 16 inches (30 × 40 cm).
Spread the cream cheese mixture over the dough, leaving about 1 inch (2.5 cm) around the edges.
Scatter the cooled blueberry mixture over the cream cheese.
Don’t spread everything perfectly evenly—some pockets of blueberries will create the attractive marbled appearance seen in the photo.
7. Form the round loaf
Fold the dough inward and carefully bring the edges together.
Pinch the seams closed.
Shape it into a rough round loaf.
Place it seam-side down on a parchment-lined baking sheet.
For an especially round loaf, you can place it inside a 9-inch cake pan or Dutch oven lined with parchment.
8. Second rise
Cover loosely.
Allow the loaf to rise for approximately 30–45 minutes.
It should look noticeably puffier but doesn’t necessarily need to double.
9. Egg wash
Whisk together:
1 egg
1 tbsp milk
Brush gently over the exposed dough.
Avoid putting a thick layer directly over large areas of exposed filling.
Sprinkle with coarse sugar if desired.
10. Score the bread
Use a sharp knife or bread lame to make 2–3 shallow cuts across the top.
Don’t cut deeply into the filling.
Scoring gives the expanding bread somewhere to release steam and also creates the rustic appearance visible in the photograph.
11. Bake
Preheat oven to:
350°F (175°C)
Bake for approximately:
35–45 minutes
The loaf should become deeply golden brown.
If the top begins browning too quickly, loosely cover it with aluminum foil during the final 10–15 minutes.
Because this loaf contains cream cheese and fruit, don’t rely solely on the outside color to determine doneness.
The bread portion should reach approximately 190–200°F (88–93°C) in the center.
12. Cool
Remove from the oven.
Allow the loaf to cool on a rack for at least 45–60 minutes before slicing.
The filling will continue to set while cooling.
Cutting it while piping hot can cause the cream cheese and blueberry filling to run.
Optional Lemon Glaze
For a sweeter bakery-style finish, combine:
1 cup (120 g) powdered sugar
1½–2 tbsp lemon juice
1–2 tsp milk, if necessary
Whisk until smooth.
Drizzle over the completely cooled bread.
For the loaf in the photo, however, I’d leave the glaze off—the rustic golden crust looks better without it.
Tips for Getting the Look in the Photo
Use plenty of blueberries
Fresh blueberries give the best whole-berry appearance.
Don’t overcook the blueberries
You want some whole berries and purple streaks rather than completely smooth blueberry jam.
Keep the filling away from the very edge
This makes sealing the loaf much easier.
Don’t over-flour the dough
A soft dough produces a much more tender loaf.
Bake until deeply golden
The darker golden crust is what gives the loaf its rustic bakery appearance.
Let it cool
This is particularly important because of the cream cheese filling.

Recipe Q&A
Can I use frozen blueberries?
Yes. Use them straight from frozen rather than thawing them. Thawed berries release considerably more liquid.
Why did my bread become soggy?
Usually one of three things happened:
The blueberry mixture was too wet.
The loaf was underbaked.
It was sliced while still very hot.
Cook the blueberries until slightly thickened and cool them before assembly.
Can I skip the cream cheese?
Absolutely. You can make a blueberry-only version by omitting the cream cheese filling.
Can I use blueberry jam?
Yes. Use approximately ½–¾ cup of thick blueberry jam rather than the cooked blueberry mixture.
Don’t use a very thin sauce.
Can I add lemon?
Definitely. Lemon zest in the dough and lemon juice in the blueberries complement the fruit extremely well.
Can I add cinnamon?
Yes. Add ½ tsp cinnamon to the cream cheese mixture for a warmer flavor.
Can I add white chocolate?
Yes. Add approximately ½ cup (85 g) white chocolate chips along with the blueberries.
Can I make it without eggs?
You can use an egg substitute in the dough, but the cream cheese filling also contains egg yolk. For an egg-free version, use a suitable commercial egg replacer in both components.
Can I make this dairy-free?
Yes, with suitable dairy-free substitutes for:
milk
butter
cream cheese
Check the labels for allergy considerations.
Can I make it gluten-free?
A conventional 1:1 gluten-free flour blend designed for yeast breads can be tried, but the texture will differ. Gluten-free dough generally needs different hydration and handling.
Can I prepare it the night before?
Yes. After shaping, cover tightly and refrigerate overnight. The next day, allow it to sit at room temperature until somewhat puffy, then egg-wash and bake.
Because the filling contains dairy and egg, refrigeration is important.
How long does it keep?
Store covered in the refrigerator for approximately 3–4 days because of the cream cheese filling.
Let individual portions come closer to room temperature or gently warm them before serving.
Can I freeze it?
Yes. Cool completely, wrap well, and freeze for up to approximately 2 months for best quality.
Thaw in the refrigerator and gently rewarm before serving.
Why did the filling leak out?
The most likely causes are:
overfilling
dough not properly sealed
filling too warm or runny
dough stretched too thin
Leave a clean border around the dough and firmly pinch the seam closed.
Why didn’t my bread rise?
Possible causes include:
yeast was old
milk was too hot
room was cold
too much flour was added
insufficient rising time
A slow rise isn’t necessarily a problem—temperature has a major effect on yeast activity.
Can I make individual buns instead?
Yes. Divide the dough into 8–10 pieces, fill each with cream cheese and blueberries, seal, and bake in a greased baking dish at 350°F / 175°C for roughly 20–25 minutes.
Is this a dessert or breakfast bread?
Both. It’s especially good as a breakfast/brunch bread, but the cream cheese and blueberry combination also makes it suitable as a dessert.
