 Ingredients

  • 2 medium zucchini, thinly sliced
  • 2 medium yellow squash, thinly sliced
  • 3 medium potatoes, thinly sliced
  • 2 medium tomatoes, thinly sliced
  • 1 medium beet, peeled and thinly sliced (optional)
  • 1 medium onion, thinly sliced
  • 3 cloves garlic, minced
  • 3 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon Italian seasoning
  • ½ teaspoon paprika
  • Salt, to taste
  • Black pepper, to taste
  • 1 cup crumbled feta cheese or grated Parmesan
  • 2 tablespoons chopped fresh parsley
  • Fresh rosemary or thyme sprigs (optional, for garnish)

 Optional Tomato Base

For extra flavour, spread on the bottom of the baking dish:

  • ½ cup marinara sauce
  • OR 2 tablespoons tomato paste mixed with ¼ cup water

 Instructions

Step 1: Prepare the Oven

Preheat oven to 190°C (375°F).

Lightly grease a 9×13-inch baking dish or round casserole.


Step 2: Slice Vegetables

Slice all vegetables about 3–4 mm (⅛ inch) thick.

Try to keep slices as even as possible so they cook uniformly.


Step 3: Make Herb Oil

Mix together:

  • Olive oil
  • Garlic
  • Thyme
  • Oregano
  • Italian seasoning
  • Paprika
  • Salt
  • Pepper

Step 4: Assemble

Arrange vegetables vertically in alternating colours:

Potato → Tomato → Zucchini → Yellow Squash → Beet

Continue until the dish is full.

Brush or drizzle the herb oil generously over everything.


Step 5: Bake

Cover tightly with foil.

Bake for 45 minutes.

Remove foil.

Sprinkle feta or Parmesan over the top.

Bake another 20–25 minutes, until:

  • potatoes are tender
  • edges become golden
  • cheese lightly browns

Step 6: Garnish

Top with:

  • Fresh parsley
  • Rosemary sprigs
  • Extra feta if desired

Serve warm.
