Mediterranean Cabbage & Cucumber Salad

A fresh, crunchy salad packed with cabbage, cucumber, carrots, herbs, and a bright Mediterranean-style dressing. It works beautifully as a light side dish or as the base for a more filling meal.

Note: No single salad can specifically or rapidly burn belly fat. This salad can be part of a balanced eating pattern because it provides vegetables, fiber, and healthy fats.

 Ingredients

For the salad

  • 3 cups finely shredded green cabbage
  • 1 cup finely shredded purple cabbage
  • 1 large cucumber, thinly sliced
  • 1 medium carrot, grated or julienned
  • ½ small red onion, very thinly sliced
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh dill, chopped
  • 2 tablespoons pumpkin seeds or sunflower seeds, optional
  • ½ cup chickpeas, drained and rinsed, optional for extra substance

Mediterranean dressing

  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon red-wine vinegar
  • 1 small garlic clove, finely grated
  • 1 teaspoon dried oregano
  • ½ teaspoon Dijon mustard
  • ¼ teaspoon black pepper
  • Salt, to taste

 Instructions

  1. Prepare the vegetables:
Shred the green and purple cabbage very finely. Slice the cucumber and red onion, then grate the carrot.
  2. Combine:
Add cabbage, cucumber, carrot, onion, parsley, and dill to a large bowl.
  3. Make the dressing:
Whisk olive oil, lemon juice, vinegar, garlic, oregano, Dijon mustard, pepper, and salt until combined.
  4. Dress the salad:
Pour the dressing over the vegetables.
  5. Toss well:
Mix thoroughly for 1–2 minutes so the dressing coats everything.
  6. Add crunch:
Sprinkle with pumpkin or sunflower seeds if using.
  7. Rest:
Let the salad sit for 10–15 minutes before serving. The cabbage softens slightly while staying crunchy.

 Q&A

Can I prepare it ahead?
Yes. For the best texture, prepare the vegetables and dressing separately and combine shortly before eating. Once dressed, it can be refrigerated for about 1 day, although the cabbage will become softer.

Can I use only green cabbage?
Absolutely. Purple cabbage mainly adds color, texture, and variety.

Can I make it without oil?
Yes. Use extra lemon juice and a little vinegar instead, although olive oil gives the dressing a smoother texture.

Is it suitable as a main meal?
It can be, but the salad itself is relatively light. Add chickpeas, beans, chicken, fish, tofu, feta, or another protein-rich food to make it more substantial.

Why massage the cabbage?
Gently tossing or massaging it with the dressing for a minute helps soften the cabbage slightly and allows the flavors to penetrate.

How long does it keep?
Undressed vegetables generally keep better for a couple of days refrigerated. Once dressed, the salad is best enjoyed within about 24 hours for maximum crunch.

 Serving Idea

Serve it alongside grilled chicken, fish, chickpeas, hummus, or warm whole-grain pita for a balanced Mediterranean-style meal.
