Pizza filling
1 cup mozzarella cheese, shredded
½ cup cheddar cheese, shredded
½ cup pizza sauce or thick tomato sauce
80–100 g pepperoni or small sausage pieces
¼ cup finely chopped bell pepper
¼ cup finely chopped onion
2 tbsp sweet corn, optional
1 small tomato, finely diced and well drained
1 tbsp chopped jalapeño, optional
1 tsp dried oregano
½ tsp Italian seasoning
¼ tsp black pepper
½ tsp red-chili flakes, optional
1 tbsp chopped fresh parsley or cilantro

100 g cream cheese, softened
¼ cup mozzarella
1 tbsp mayonnaise

Step-by-Step Recipe
1. Prepare the vegetables
Finely chop the onion, bell pepper and tomato.
Important: remove excess moisture from the tomato. Wet filling can make the bread soggy.
If using fresh sausage, cook it first until completely done. If using pepperoni, it can go directly into the sandwich.
2. Make the pizza filling
In a bowl combine:
mozzarella
cheddar
pepperoni/sausage
bell pepper
onion
tomato
oregano
Italian seasoning
black pepper
chili flakes
Mix gently.
Don’t add too much sauce to this mixture—the bread will become difficult to crisp.
3. Make the creamy cheese mixture
For an especially rich, layered sandwich, mix:
100 g cream cheese + ¼ cup mozzarella + 1 tbsp mayonnaise + garlic powder + black pepper.
Set aside.
This step is optional, but it produces the thick, gooey cheese layer visible in the photograph.
4. Prepare the bread
Lay out 8 bread slices.
Brush the outside of each slice with:
melted butter
olive oil
garlic powder
Italian seasoning
tiny pinch of salt
Don’t soak the bread. A thin coating is enough.
5. Assemble the sandwiches
For each sandwich:
Place one slice of bread down.
Spread 1–1½ tbsp pizza sauce over it.
Spread a thin layer of the cream-cheese mixture, if using.
Add the pizza filling.
Add another layer of mozzarella.
Place the second slice of bread on top.

You want a generous filling, but don’t overstuff it—the cheese needs room to melt.
6. First cooking method — skillet
This is my recommended method for the crispy exterior.
Heat a heavy skillet over medium-low heat.
Place the sandwiches in the pan.
Cook approximately 3–5 minutes per side, pressing very gently with a spatula.
The bread should become:
deep golden brown
crisp around the edges
toasted underneath
Keep the heat moderate. High heat will burn the bread before the cheese melts.
Important trick
After browning both sides, reduce the heat to low and cover the pan for 2–3 minutes.
The trapped heat melts the cheese inside.
7. Add the pizza topping
For the appearance in your photograph, don’t stop at the toasted sandwich.
Put the cooked sandwiches on a baking tray.
Spread a small amount of pizza sauce on top.
Add:
mozzarella
pepperoni/sausage
oregano
parsley
Parmesan, if desired
8. Broil/bake
Place under a hot broiler/grill for approximately 2–4 minutes, watching continuously.
Or bake at:
220°C / 425°F for 5–8 minutes
until the cheese is completely melted and has a few golden-brown spots.
