INGREDIENTS
For the chicken
4 boneless, skinless chicken breasts, about 6–8 oz each
2 tablespoons olive oil
2 tablespoons melted butter
1 tablespoon fresh lemon juice
Blackened seasoning
2 tablespoons sweet paprika
1 teaspoon smoked paprika
1 tablespoon garlic powder
2 teaspoons onion powder
1 teaspoon dried oregano
1 teaspoon dried thyme
1 teaspoon Italian seasoning
1 teaspoon freshly ground black pepper
1 teaspoon kosher salt
½ teaspoon cayenne pepper
½ teaspoon chili powder
½ teaspoon dried parsley
¼ teaspoon sugar
The combination of paprika, garlic, onion, oregano, thyme and pepper is characteristic of blackened chicken seasoning.
Parmesan crust
For the extra-crusty finish visible in the photograph:
½ cup finely grated Parmesan cheese
¼ cup finely grated Pecorino Romano, optional
2 tablespoons finely ground breadcrumbs or panko
1 tablespoon garlic powder
½ teaspoon smoked paprika
½ teaspoon Italian seasoning
CREAMY GARLIC-HERB DIPPING SAUCE
This makes approximately 1½ cups.
2 tablespoons butter
4 cloves garlic, finely minced
½ cup chicken broth
1 cup heavy cream
½ cup freshly grated Parmesan
2 tablespoons cream cheese, softened
1 tablespoon fresh lemon juice
1 teaspoon lemon zest
1 teaspoon dried parsley
1 teaspoon Italian seasoning
½ teaspoon black pepper
¼ teaspoon salt, or to taste
½ teaspoon red-pepper flakes, optional
1 tablespoon fresh chopped parsley
1 tablespoon fresh chopped dill, optional
Cream, Parmesan and garlic form the basic foundation of several creamy garlic-Parmesan chicken sauces.
STEP 1 — PREPARE THE CHICKEN
Pat the chicken completely dry with paper towels.
This is important.
Dry chicken = better browning.
If the breasts are very thick, place each between two sheets of plastic wrap and gently pound them to approximately ¾–1 inch thick.
For the photograph’s chunky appearance, don’t pound them paper-thin.
Season both sides lightly with salt.
STEP 2 — MAKE THE BLACKENING MIX

STEP 3 — MAKE THE PARMESAN CRUST

STEP 4 — COAT THE CHICKEN
Brush each chicken piece with a little olive oil.
Generously cover both sides with the blackened seasoning.
Press it firmly into the meat.
Now sprinkle the Parmesan mixture over the chicken.
Press the cheese mixture onto the surface.
You want a thick, irregular coating, rather than a perfectly smooth breading.

STEP 5 — SEAR THE CHICKEN
Heat a heavy skillet, preferably cast iron, over medium-high heat.
Add:
1 tablespoon olive oil
1 tablespoon butter
Once hot, place the chicken into the pan.
Cook approximately:
3–5 minutes on the first side
until deeply browned.
Don’t constantly move the chicken.
You want the seasoning and Parmesan to develop a dark crust.
Flip carefully.
Add the remaining:
1 tablespoon butter
Cook another 3–5 minutes.
STEP 6 — FINISH COOKING
If the chicken is thick, the outside can brown before the center is cooked.
Reduce the heat to medium-low and continue cooking until the thickest part reaches:
165°F / 74°C
on an instant-read thermometer.
You can also transfer the skillet to a 375°F / 190°C oven for approximately 5–10 minutes.
The exact time depends on the thickness of your chicken.
Remove the chicken and let it rest for 5 minutes.
STEP 7 — FINISH THE CHICKEN
While the chicken is resting, drizzle with a tiny amount of fresh lemon juice.
Don’t use too much.
The lemon should brighten the blackened seasoning rather than make the chicken taste sour. MAKE THE CREAMY GARLIC SAUCE
Step 8 — Garlic
Using the same skillet, reduce heat to medium-low.
Add:
2 tablespoons butter
Add the minced garlic.
Cook for approximately 30–60 seconds.
Don’t let the garlic become dark brown.
Step 9 — Deglaze
Add:
½ cup chicken broth
Scrape the browned bits from the bottom of the skillet.
Those browned bits contain a lot of flavor.
Simmer for approximately 2 minutes.
Step 10 — Add cream
Pour in:
1 cup heavy cream
Add:
Italian seasoning
black pepper
red-pepper flakes
lemon zest
Bring to a gentle simmer.
Do not boil aggressively.
Cook for about 3–5 minutes, stirring occasionally.
STEP 11 — ADD THE CHEESE
Lower the heat.
Add:
½ cup freshly grated Parmesan
Whisk until melted.
Then add:
2 tablespoons cream cheese
Whisk until smooth.
The sauce should become thick and creamy.
If it’s too thick, add 1–2 tablespoons chicken broth.
If it’s too thin, simmer another minute or two.
STEP 12 — FINISH THE SAUCE
Turn off the heat.
Stir in:

If you don’t want to make the Parmesan crust separately, simplify it:
Chicken + blackened seasoning + Parmesan + skillet.
Then make the sauce in the same pan.
That gives you most of the flavor with considerably less work. Parmesan-crusted chicken commonly uses a Parmesan/breadcrumb coating before skillet cooking, while blackened versions rely on the spice crust and high-heat searing.
